Honey and Pear Muffin ( 蜂蜜梨子满芬)

I was searching something to bake for my kids. I usually will bake bread for them to bring to school for their tea break. Today, i am a bit late to bake bread so i thought why not bake muffins. I remembered that i saw this Honey and Pear muffins in Cheah's blog. Since i have all the ingredients, i am giving it a go.

These muffins are so good! Love the soft and moist crumbs and the added diced pear give an extra bonus to the lovely muffins. 


Honey and Pear Muffin
Recipe adapted from Cheah of No-Frills Recipes
makes 12 muffins

Ingredients:
8 oz/220g plain flour
3 oz/  80g castor sugar
3 tsp baking powder
1/4 tsp salt
1 tsp cinnamon powder (i used 1/2 tsp)
1 cup yogurt (i used natural set plain yogurt)
1/4 cup melted butter or Canola oil (i used Canola oil)
1/4 cup honey
1 tsp vanilla 
1 egg
1 cup diced Packham pear
Some brown sugar  and some cinnamon powder for sprinkling (i did not add this)

To Do:

  1. Whisk flour, sugar, baking powder, salt and cinnamon together. Set aside.
  2. Whisk egg, yogurt, honey, vanilla and oil in a mixing bowl. Pour this wet ingredient into dry ingredient.
  3. Gently stir in diced pear. Do not overmix.
  4. Scoop onto paper lined muffin pan. (i used paper cups) Sprinkle with brown sugar and cinnamon mixture.
  5. Bake in a preheated oven @ 200C for 18-20 minutes or test with a skewer till it comes out clean. 
  6. Serve warm with dollop of honey.

材料
8安士(220克) 底粉
3安士 (80克)  幼糖
3 茶匙                 发粉
1/4 茶匙              盐
1 茶匙                 桂皮粉
1 杯                     原味酸奶(优格)
1/4 杯                  牛油或葵花油
1/4 杯                  蜂蜜
1 茶匙                 香草精
1 粒                     鸡蛋
1 杯                     梨子 (切丁)
少许黄糖和桂皮粉

做法:

  1. 把烤箱预热200C。 准备12个满芬纸杯。
  2. 把底粉,糖,盐,发粉,桂皮粉拌均匀。备用 。
  3. 把鸡蛋,酸奶,香草精,油也拌均匀,再加入粉类,拌均。
  4. 再把梨子丁,轻拌入。(不可拌过度,免得起筋)
  5. 把面糊均匀的分配到12个满芬纸内。洒上黄糖和桂皮粉。
  6. 送入烤箱,烤18至20分钟。
  7. 配上蜂蜜,享用。

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
