TeA Time ~ 15 ... Banana Muffin ~香焦满福

My father-in-law is a green finger. Whatever he plant will bloom and blossom. Recently his banana tree bare lots of bananas. Once it is ripe, we have to finish it or it will become rotten. It is time to make something with these bananas. I make Banana Muffin, it simple and delicious.                                 ~my little banana muffins~                               ~I like the crispy top of these muffins~ This yield: 6 small size cups (top 5.5cm and bottom 4cm cupcake case) Ingredients: 1 medium size banana ~ peel and mashed 1 egg 1/4 cup canola oil 1/4 cup castor sugar~I reduce a bit of the sugar if the banana is sweet  1/2 cup self raising flour 1/4 tsp vanilla essence ~ optional 1/2 tsp salt some papercups or muffin cups ~ About 8 pieces for small size ones (I use nescafe papercups ...) Cupcakes ~可爱的小蛋糕....^^

                   ~These are the cupcakes freshly baked from the oven~ Little cupcakes are really cute and easy to handle. Either is making it or icing it or EAting it... :) I have the feeling of doing it when my Shawn turn 5 years old and I am making the cupcakes for his birthday party in tadika. I make more than a hundred for him to bring to his tadika.   Ingredients: 2 grade 'A' eggs 125g unsalted butter 100-125g castor sugar 125g self raising flour 2-3 tbsp fresh milk   To do: 1)Preheated oven at 200c and prepare 13 medium size papercups. Cream butter and sugar until it is pale. 2) Add in egg one at a time until well combine. 3) Add in self raising flour with milk and mix well.                               ~Fill in the cupcakes only 3/4 full.~                                ~Cupcakes is baking in the oven~ 4) Fill batter   into papercups.  Fill in only 3/4 full . 5) Bake in the preheated oven for 18-20 minutes Cool the cupcakes before f

Tea time 14~Zerba Tea Cake ~ 斑马牛油蛋糕

Butter cake I believe have been around for ages. A lot of you including myself loves butter cake. This is a different butter cake with cooking chocolate. It is a recipe from a book named "my favourite DANITY DESSERTS~辛福下午茶点". A book from Chef and Food Stylist: Kevin Chai 蔡高晉老师.                                                   ~ Zerba Tea Cake ~ Ingredients: 170g butter 150g castor sugar 3 eggs 170g plain flour 1/4 tsp baking powder 40g chocolate ~ I use Hershey unsweetend baking chocolate 40ml fresh milk 1/8 tsp bicarbonate soda To do: 1) Preheated oven to 180c; greased and lined I don't have a 18cmx25cm tray so I use a 8"x8" tray 2) Melt chocolate with fresh milk over low heat. Remove, stir in soda, leave aside. 3) Beat butter and sugar until light and fluffy. A special Birthday cake for the Special One....^^

                                       ~ A piece of yAm Cheesecake~ This year I wanted to make a very special cake for my hubby's birthday. When I ask him "what cake would you like to have for your birthday?" He answer "you choose for me." I choose a Yam Cheesecake...^^                                                    ~ Hubby's Yam Cheesecake~ Ingredients for base: 100g butter diced 170g digestive biscuits, finely crushed 2 tbsp firmly packed brown sugar 50g almond flakes, toasted To do: 1) Melted butter in pan over low heat. Add in combined biscuits, sugar and almond flakes. Press into a greased 23cm spring form tray. Cover and put into refrigerate while preparing the filling. ** Use only pure butte or unsalted butter. Because butter will affects the taste of the biscuits base, avoid using margarine or butter substitutes.    Filling: 500g cream cheese 30g butter 160g castor sugar 700g yam, cooked and diced 2 tbsp + 2 tsp corn fl

Happy Teacher's Day...教师节快乐

宝贝们16日庆祝...教师节..^^ 他们非常兴奋,邀求妈妈做了个蛋糕送给老师们. 他们就七手八脚帮妈妈做了个蛋糕....^^                                            ~Happy Teacher's Day Cake~ My boys (Shawn and Samson) is celebrating their teacher's day on the 16th May. They wanted to give their teachers a surprise. They help me up by baking a special cake for their teachers. 飘来的面包香~燕麦面包....Oatmeal bread loaves~~

My boys likes to eat bread. They can have it plain or with jam or tuna. I want them to have health bread so I DIY my own bread. I read from a newspaper article reporting that just a loaf of plain bread, those selling in the bakery contain 30 types of additives and preservaties. That is why bread from the bakery can stay soft, fresh and last for few a days.  What do you think???? I think having a bread machine, DIY(do it yourself) will make you feel health and you know what kind of ingredients you are putting in your bread and what ingredients you are giving your kids... I make OATMEAL BREAD LOAVES to day. If you like you may buy organic flour, yeast even sugar from a organic shop. I belive there is  organic shops everywhere now. Lunch for two ~ Cha Kueh (炒芋头糕)

We are having a different kind of lunch today, it is Yam Cha Kueh. Cha Kueh means frying kueh into a dish. Some ingredients are added when frying the kueh to add the flavour and it taste just wonderful. Like this one is Steamed Yam kueh and stir fry into Yam Cha Kueh.....^^                                          Steamed yam kueh (yam cake) Ingredients for steamed yam kueh: 500g yam ~ peel, wash and shredded 250ml water for cooking yam 1 kg rice flour 1 tsp chopped garlic 1 1/2 tsp salt 1/2 tsp pepper 1300ml water Method: 1) Mix rice flour and water into a wet mixture, set aside. 2) Put some oil in a wok and stir fry chopped garlic and shredded yam until soften and pour in the water. Add in salt and pepper. Simmer this with low heat until it is cooked and slightly thick. 3) Pour in the rice flour mixture, keep stiring until a thick paste is form. 4) Transfer this into a steaming tray and steam for 25 minutes. 5) When is cooked, let it cool before cutting.

Hakka Steamed Sweet Pork Belly ~ 客家甜扣肉

Yam/Taro is my favourite, but handling yam is really tricky. Tricky part is, when you peeling and clean it the starch of the yam will make you really itchy. I remember when I am in my younger age, I used to help my mum peel yam when she wants  to make this dish.   This is a hakka specialty, it is more to sweet taste. We always have this dish on special day or occasion. (大日子) Ingredients: 1 kg pork belly (I used 1 kg roasted pork) 500g yam Marinade: 1 tbsp light soya sauce 1 tsp five spice powder (If you are using roasted pork like me, you may omit this part and method 1 and 2) Gravy mixed : 2 tbps chopped shallots 1 tbsp garlic 50g rock sugar 3 tbsp light soya sauce 1 tbsp oysster sauce 1 tsp sesame oil 1 tsp five spice powder 100ml water Method: 1) Cut pork belly into 2-3 thick slices and mix with marinade ingredients. Deep fry in hot oil until golden brown. Dish up and rinse with water. 2) Use fork and prick some holes on the skin. Cut into about 1.5cm thick sl
