Tea time 2 (Steamed cake with Chicken Floss) 鸡肉丝蒸鸡蛋糕

Another tea time recipe that I pick for our teatime snack. Hope you too can enjoy like us.... ^^ This steam cake actually is a new version of 鸡蛋糕 , I guess. Just that it is added something special. What did I add....Check out my recipe yourself.... Steam Cake with Chicken Floss Ingredients A: 5 eggs 150g castor sugar 1 tbsp stabillizer 3 tbsp fresh milk Ingredients B: 200g plain flour, mixed with 1tsp baking powder, sieved Ingredients C: 1 tbsp corn oil 50g chicken floss 1 tbsp fried shallots Method: 1) Line a 8" cake tin with parchment paper. 2) Whisk ingredients A at high speed until white and fluffy. 3) Mix in B with low speed. Lastly add corn oil and mix well. 4) Pour half of the batter into the lined basket and sprinkle chicken floss on top of the batter. Slowly pour in the remaining of batter and sprinkle fried shallots on top. 5) Steam the cake at high heat for 30 minutes. **This recipe is from Yum Yum Maga

A Quick Lunch

This is a quick lunch we used to have once a while when we are out of idea what to eat for lunch. Anywhere is nice and the kids loves it. Sometimes I will make this for out Potluck get together too. It's quick and easy to prepared. Shh...Actually this is my hubby's Hakka style fried noodles . He is the cook for this fried noodles. Hakka Style Fried Noodles Ingredients: 4 small pkts of MiKo-Song (this brand name of the noodle, you can find it in any supermarket, we found the texture of this noodles is chewy and smooth) 1 medium carrot ~ cut into very thin strips 2/3 sprig of leeks (Chopped the leek head fine, and slice the rest of the leeks) 1 tsp chopped garlic 3 eggs 4-5 dried mushrooms ~ soaked and slice some bean sprout ~ about a big hand full, washed and remove the tails 1/2 sweet cabbage ~ slice into strips 2 tbsp dried shrimp ~ wash and chopped finely Some light soya sauce and salt to taste Method: 1) Blanch the noodles until it is tender and drain for later use. Easy Pancake

When Shawn started to go to school I used to make this pancake for him. I will packed a light snack box for him. He will have different snack everyday and he loves it. Guess what!.. slowly he asked me not to packed him anymore.  Want to know why? Hehe...his school do prepare very yummy light snack for them everyday. They have doughnuts, another day spaghetti, another day scramble egg and sausages, another day fried noodles, another day porridge etc... Imagine that...and he can enjoy these light snack with his friends some more.. Now, HEHE I don't need to prepare light snack for him...but this pancake is his favourite once and while teatime he will request for .....^^ Continue version...   BUt... now today in year 2012, he is in primary one ... ^^ Hakka Kueh ^^

This is a hakka family traditional food. Its called 'shui pan' in hakka, means wrap and roll some filling in a piece of kueh tiao skin/sheet. 'Pan' means kueh in hakka so it is wrap n roll into a piece of kueh. It nice and handy, is a delicious finger food. Its easy to prepare and the ingredients are very healthy too. This is a simple wrap and roll finger food. It fast and easy to prepare for a bring along food, a picnic, a afternoon snacks. Shawn take this for lunch, he can eat 2-3 rolls. He love it with the chinese leek and yellow bean curd. Do It Yourself, you can wrap and roll more filling in this kueh. For me I like the filling to be simple, I put french beans, yellow bean curd, dried shrimps and chinese leeks just these is good enough. This is yellow bean curd, this is one of the main ingredients. Tea time 1 ~Shawn n Sams' fun time

Tea time is a very interesting time for us. Shawn and Sam will get ready their own chairs and sits nicely waiting for the snacks. Simon will make coffee and I will get ready snacks for everyone. (but of course the kids don't drink coffee they drink juices) Sometimes we have friends coming over for tea too. That will be even more merrier with the chit chat with friends and the kids laughter. My favourites ~ Cheese Slice Chiffon Cake

Chiffon cake is my favourite. I remember the first time I made a chiffon cake is a pandan chiffon and my 'sifo' is my auntie Fong. She gave me a very simple and sure successful recipe. Guess what? I really did it. This one is Cheese Slice Chiffon Cake. I used a 7" tubed pan to baked this chiffon cake. Its cute and for a small family we can finish it just for afternoon tea...^ ^   Cheese Slice Chiffon Cake Recipe source is adapted from Kevin Chai "Chiffon cake is done" Ingredients (A) : 3 pieces of cheese slices 20ml cooking oil 20ml milk 2 egg yolks 10g castor sugar 40g plain flour Ingredients B: 3 egg whites 1/4 tsp cream of tartar (1 use 1/2  tsp lemon juice) 40g castor sugar Method: 1) Double-boiled cheese, milk and cooking oil till cheese is completely melted.
