Fusilli Pasta with Tuna and Sweet Corn

This is another quick lunch. It is fast, easy and simple.
这道可以是简单的早或午餐哦!!

Corn and tuna is a great combination. My kids loves it!! 
 玉米和tuna鱼很棒的配搭...味道好好!!


Fusilli Pasta with Tuna,  Sweetcorn 
Recipe source: adapted from Baby Sumo

Ingredients
80g fusilli pasta ( i used mixed spinanch and carrot fusilli )
1/3 can tuna (i used can tuna chunk in olive oil)
1 shallot, finely chopped
6 cherry tomatoes, halved (i did not add this)
A handful sweetcorn (you can use canned or frozen)
2 quail's egg ( i did not add this)
Salt and pepper, to taste
2 tbsp EVOO (i used olive oil from can tuna)

( i added 1 tbsp mayonnaise and 1/4 tsp condensed milk)

To do:
1. Boil quail's egg for 4-5 minutes in simmering water, according to your preference. Then transfer to iced water,  the cold water sets the membrane so the egg can be easily peeled. Halve the egg. (Note: If making for packed lunch, it would be better to hard boil the quail's egg)

(i did not  add quail's egg)

2.  Cook pasta according to pack instructions in some salted water with a few drops of olive oil. Drain and run under cold water to stop pasta from cooking further.

3. Place pasta in a large bowl, and drizzle with 2 tbsp EVOO. Add shallot, tuna, sweetcorn and toss well. Season with salt and pepper. (i mixed tuna with mayonnaise)

4. This can be made in advance and stored in an airtight container in the fridge. Suitable as pack lunches.

  7. Pasta is my children favourite. Actually I haven't found a child who doesn't like pasta yet! Tuna & corn are great combination. I used to make this for my sandwich!

Old Fashion Kopi Tiam Bread Loaf 古早咖啡店面包

This is an old fashion kopi tiam (coffee shop) bread loaf. It has coarse texture but it is so soft and nice! This coarse texture kind of bread bring back many child hood memories! We use to have this type of bread in the local coffee shop. They will take two pieces of bread, make into a kaya butter sandwich, ( a piece spread with butter and the other piece spread with Kaya.) Crispy Prawn fritters...香脆炸虾卷

 This book have been sitting in the recipe book shelf for ages.  It is a Yum Yum magazine, a full colour and step by step wonderful recipes magazines. Every two months a new one comes, the old one will be left sitting behind in the book shelf...:p Sometimes I will take out the previous volume to read. Today i am running over the old volumes again. I am looking for.... this Crispy Prawn Fritter recipe .....'Bingo' I found it in Volume 44 Issue 2006. Just happen that my hubby's good friend gave us some prawns. I tried this and it is really good.
