Rainbow Jelly 彩虹菜燕

 Hi everyone, hope you have a lovely day! The weather is really unbearable, the heat is so warm. My kids have been hiding in the air conditioner room to get away from the heat. To cheer them up i make some Rainbow Jelly for them to enjoy. It is cool, sweet and refreshing. It is simple to make, appetizing and also suitable for any gathering or party.
炎热的天气,真的让人吃不消!我家的小朋友们都躲到有空调的地方去了。
为了能让他们凉快一些,就做了这彩虹菜燕给他们。这是个值得推荐的甜品。这甜品好看又好吃,冷冷,甜甜(当然不会太甜)最适合带去聚餐或小朋友的party

I choose a healthier version, i use fresh milk to make this pretty rainbow jelly. Ingredients is simple. 选来了比较健康的牛奶取代椰浆。简单的菜燕粉可以做出好吃,健康又美丽的彩虹菜燕呢!!


Rainbow agar-agar Jelly
Recipe shared by my little favourite DIY
makes 2 boxes of 12cm x 17cm (approx: 1 liter each)

Ingredients for the colored layers:
1 liter fresh milk
120g granulate sugar
1/2 tsp salt
6 tsp agar-agar powder
4 pcs pandan leaves-knotted
some Americolor food coloring (Soft pink, Orange, Lemon Yellow, Electric Green, Electric Blue and Regal Purple)
 
Ingredients for plain transparent layers:
1 liter water
120g granulate sugar
1/2 tsp salt
6 tsp agar-agar powder
4 pcs pandan leaves-knotted


To Do:
1. Boil the ingredients for transparent layers in a saucepan, (stirring while cooking) till agar-agar powder is complete dissolve and it look clear and transparent. Fish out the pandan leaves, covered, keep it warm and set aside until the milk layer is ready to assemble.

2. Boil the ingredients for milk layers in another saucepan, (stirring the mixture to prevent agar-agar powder from sinking to the bottom) till there is a tiny bubbles appear around the side of the saucepan then it is ready to be remove from the stove. Fish out the pandan leaves (do not bring to a big boil as it will have a skin layer on top)

To assemble:
  • Get ready 2 1000ml plastic container. Rinse with water and shake off excess.
  • Scoop 1 ladle (my ladle holds 90ml) of transparent agar-agar into each container. Leave it till it is set slightly. (not too set/hard or the layers will not stick together. If it is just lightly scratch the layer with a fork and apply the next layer)
  • The second layer will be the milk agar-agar, color it will soft pink. (add more if you like dark color but i like mine more in pastel color). Leave to set slightly again.
  • Do the same alternating between the milk agar-agar layer (follow the rainbow color) and the transparent agar-agar layer have used up.
  • Leave the whole jelly to cool down before covering it and refrigerate it for at least a few hours. I leave mine overnight in the fridge. Slice and serve it cold.

用了2 个透明的打包盒子做了两个(一个容量是1000ml)或用2毫升Pyrex长方形玻璃盘
Each layer i use 1 ladle to measure (1 ladle = approx: 90ml) some Americolor food coloring
每一层用了一勺子 (一勺大约是90ml)
first layer - transparent
第一层 - 一勺透明菜燕
Red, Orange..红,橙
Red, Orange, Yellow...红, 橙, 黄
Red, Orange, Yellow, Green, Blue, Purple Done!  (i'm a bit lazy this round that i did not make it 7 colors :p  If you want that indigo layer you can add 1 drop blue color and 1 drop purple)
红, 橙, 黄, 绿, 蓝,紫 搞定了!(这次比较懒没做足7层 如果你要靛色可以用1滴蓝加1滴紫 )

食谱分享:my little favourite DIY
 做2盒(容量1000ml)
 
透明层材料:
1 毫升 清水
120克 糖
6 茶匙 菜燕粉
4 片 班兰叶( 打结 )
1/2 茶匙 盐

牛奶层材料:
 1 毫升鲜奶
120克 糖
6 茶匙 菜燕粉
4 片 班兰叶( 打结 )
1/2 茶匙 盐 
Americolor食物色素 (Soft pink, Orange, Lemon Yellow, Electric Green, Electric Blue and Regal Purple)

做法:
  • 把透明材料煮滚。 保温,盖好。 
  • 把牛奶材料煮微滚。不可大滚。保温,盖好。
  • 把盒子过水下。倒入一勺透明层菜燕。待凉,手指抹不粘就可以倒入第二层了。
  • 第二牛奶层加入红色素。
  • 重复透明层和牛奶层至到用完。 (牛奶层的颜色跟着彩虹的颜色调配噢!)
  • 完成后,放入冰箱数小时再切后冷冷享用。

      Sorry for my late reply.
      There is transparent layer if you look at my 5th and 8th picture.
      Only that the colored layers over shadow the transparent layer at first. But eventually the colored layers will dye the transparent layers .. lol (like after 2 days)

      很了解您和女儿的感受。很不爽对吧!成品做出来不是自己所要的效果。没关系,再试试把。我可以提供一点贴士。牛奶层我是用full cream milk的牛奶,一定要煮到锅边开始冒起小泡泡,还有煮时要不停搅拌让燕菜粉完全融化到牛奶里/水里。不需大滚,因为大滚,牛奶表面会张皮。只要锅边冒起小泡泡就OK了。
      先倒第一层,透明的。当你用手指轻轻摸不黏手就可以倒第二层牛奶层(红)的了。不可等燕菜层太硬,才倒第下一层。一定要半硬状态就倒下一层。(就是当摸是表面是不黏手但里面还是柔软的)

    比如黄色我拿芒果水,红色我用甜菜根水那样?
    因为不想买太多色素。。怕买了用一点点用放那边发霉��

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. My fil (father in law) loves butter cake very much.  He loves the butter aroma and  he said its filling and not like cotton soft cake has no texture like butter cake and it is too soft and too spongy :p :p  我家公爱吃奶油蛋糕. 他说奶油蛋糕香,有口感又吃的包. 不像海面蛋糕太柔软了,咬没东西. >< 糕 It has got a almost flat top :D The side are nice straight and flat.
