Hokkaido milk Tuna Buns .. 北海道牛奶吞拿面包

This is another soft and nice bread rolls that i love to bake. These are super soft. They are made into triangular shape with tuna mayonnaise filling. My kids love tuna. To be actual they love fish, as long as the fish is fresh and cooked well, any type of fish, they will eat it happily...lol

This is another recipe using the straight dough method. I am using my Noxxa Multi function bread maker to mixed the bread dough. Just put all the ingredients into the bread pan. Add in water or liquid first, then sugar, salt, then flour and milk powder(if using), then instant dry yeast, then butter spread evenly in the four corner of the bread pan. (i normally will cut the butter into cubes) Then press dough mode or pizza dough mode.

1) Flatten the dough with a rolling pin.
2) Add a tablespoon of the tuna filling. Start to seal the top side by pinching the both top together.
3) Do take care that do not let the filling touches the side of the seal part or it will not stick together when it is pinch to seal.
4) Pull the bottom part up and seal along the side (as in picture 4)
5) Do seal it nice and neat to prevent it from burst open when it is being proof.
6) Arrange the shaped buns seam side down on the prepared baking tray.

The buns are nicely brown and i love the slightly chewy texture,



Hokkaido Milk Tuna Buns
Recipe from the last recipe i used to make Hokkaido Milk Loaf
Makes 12 triangle buns
Method: Straight dough

Ingredients:
285 g bread flour30 g cake flour (i used all purpose flour)125ml milk75ml whipping cream1/2 egg (about 32 g)40 g castor sugar1 1/4 tsp dry yeast1 tsp salt(if you wanted to add milk powder just deduct 15g bread flour and add in 15g milk powder)
Glaze1 yolk mix with 1 tbsp milk
Tuna filling:1 can of tuna flakes in olives oil (drained)3 heaps Tbps mayonnaise some ground black pepper **mixed all together.
Method:
  1. Grease or lined parchment paper on 2 baking tray 
  2. Put milk, whipping cream, egg, flour, milk powder, salt, sugar and yeast into the bread pan. In Noxxa multi function bread maker i use 'pIzza dough' mode. (it take 55 minutes included the first proofing time) If you are using a mixer to mix the dough, just mixed the dough until it is elastic and smooth. Rolled it round and let it proof in a oiled bowl for 40 to 50 minutes or untill it is double in size.
  3. Remove dough from bread pan, punch down to expel air. Divide dough into 12 portions and rolled round.
  4. On a lightly floured surface, flatten the piece of the round dough, add in the tuna filling and shape it into triangle..  (refer pic a)
  5. Place the shaped bread onto the prepared baking tray. Covered with cling wrap or a piece of clean cloth and let it proof for about 40 to 50 minutes or till it rises double its size.
  6. Glaze the buns with egg mixture, Bake in a preheated oven at 175C for about 18 minutes
Note:If you do not have a bread machine, mix the dry ingredients with wet ingredients and knead on medium speed with a stand mixer until the dough is smooth, non sticky, and elastic.

  6. Hi Doreen, can i replace the 75ml whipping cream with milk . Will the texture of the bun be the same?

      Thanks for dropping by.
      If whipping cream were to replace by milk the texture of the bread will be different.
      Whipping cream content more fat then milk. The whipping cream I am using content 35% fat which you can see there is no butter in the recipe. If you want to replace whipping cream with milk no harm trying but do add 30 grams of butter into your recipe.

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake.
