Kluang Mooncake 居鑾月餅

Still share mooncake today??  ^_^
Is it not the mooncake festival had just passed.
Yes,  yes,i must share this Kluang mooncake today.
Have you ever seen a rugby ball shape mooncake?
I read the interesting post Kluang Mooncake from my Ah Chi's (sister) blog, She mention that, this mooncake received good feedback from her family after she baked and let them sample. The crust is buttery and almost melt in mouth pastry with an salted egg yolk wrapped inside sweet lotus paste filling  (low sugar)!
Later then i saw Pink lady from Lucky Inn baked this too.
 
 Do you think this look like a little mice? My second ask me "mum, this look like a little mice to me! Is this a mice mooncake..LOL


The sweet lotus paste pair with salted egg yolk and the buttery almost melted in the mouth crust is SO GOOOOOD!!

Kluang Mooncake 居鑾月餅
*makes 4 (mine make into 8)


Ingredients:
175g butter, room temp
50g condensed milk or sweetened creamer
255g plain flour / Hong Kong flour
1 egg yolk


400g white lotus paste or your choice of paste  (i used plain lotus paste and pandan dou yong paste)
8 salted egg yolks (brush with rice wine, steam for 5-10mins)


Egg wash- 1 egg yolk +1tsp milk or water



To Do:

1. Cream butter and condensed milk till light,
2. Add in egg yolk, and beat until combine.
3. Mix in flour, mix till become a soft and not sticky dough.
4. Fill two egg yolks with lotus paste (100g each) and shape like a rugby ball. (i make mine into 50g each (lotus paste) with one egg yolk each
5. Then wrap the lotus paste with pastry (110g each) and also shape like a rugby ball. Place on a lined baking tray.(i make mine with 50g each pastry)
6. Use a fork to draw few lines on the top of mooncake. Egg wash the mooncake.
7. Bake at a pre-heated oven at 170C( fan forced) for 25-30mins. (i baked mine for 28 minutes)

 
 My ah Chi make double yolk Kluang mooncake and i as ah Ber make single yolk Kluang mooncake...hehehe

  3. Actually I did bookmarked this Kluang Mooncake to try out too....but I was too lazy after I have made few batches of the traditional ones. I love the look of your mooncake as the golden colour is just right.

    This pastry is indeed buttery and nice. I heard that the shop selling this mice mooncake actually use bread flour. May give it a try next time.

  13. Hi Doreen, Happy belated Mid-autumn festival to you and family. Wow, this Kluang mooncake looks so beautiful and ho jiak! No, I think you did the right thing to post this even though the festival is already over. This will definitely gives us ample time to practice making this mooncake and by next Mid-autumn, we will be very pro in Kluang mooncake liao. I am bookmarking this and will give this a try too. Hokkaido Chiffon Cake - A Cake that will make you Smile (Bake Along #64)

I baked this cake once, twice, thirce and now i lost count BUT everytime i bake this cake i feel HAPPY. Hope this happy thoughts and feeling will spread to YOU ^_^ Happy that the cake rise beautifully and with almost no shrink or crack. Happy that my boys and friends love this cake. I baked this chiffon cupcake again for Bake Along event. I am going to Bake Along with these 3 beautiful ladies again.  This is a revisit of this recipe - HERE The previous post of Hokkaidao chiffon cupcake, i used durian cream as filling. Now in this post i used vanilla whipped cream/Chantilly cream as filling. I love to use dairy whipping cream as filling. Ayam Masak Merah ... 香辣红番茄鸡

Ayam Masak Merah  is a Malay dish named Malay Red Cook Chicken.  The red colored comes from the tomato ketchup/puree and chilies.  I know my kids loves tomato and this dish is cooking with tomato ketchup. Oh!! they will love this tasty, yummy Red Cooked Chicken. One thing i am worrying is that, this dish will be spicy so i decide to cook the kids version by reducing the chillies to the lowest amout, that is 1/2 a chilli. The result is wonderful..my kids love..love..love this :) 香辣红番茄鸡, 是道吃过就会爱上的一道佳肴. 它的红是来之红番茄/番茄酱和红辣椒的天然色素. 我家宝贝们爱番茄酱, 我想谁家宝贝不爱呢!! 就想煮这道佳肴给他们尝尝. 可是啊!! 又担心辣, 我要香不要辣..就来个宝贝们的不辣而香的红番茄鸡吧!! :D 真的宝贝们爱吃哦!! 开心:D 看看..买相还不错吧?
