Mini Cinnamon Sugar Doughnut Muffin ~ 迷你肉桂多拿满福

This is something new to me again, baked doughnut muffin. A friend gave me a recipe book which is about how to baked doughnuts but have always delaying to give it a go.. =p
Thanks to Bake Along event i have the chance to bake this to join the event :D




Thanks to Lena for her converted version recipe. I am very confused when using cups and spoons..:p but hers is in grams and milis..:D
This doughnut muffin is quite nice to eat. It has a crunch crust, soft and cakey inside when it is hot from the oven. After cool, coat it with cinnamon sugar. It is not overly sweet as the doughnut itself is not sweet. My youngest love it very much..he is always my dear supporter..^_^ ..


 很特别多拿滋..是用来烤的哦!!
通常看到的多拿滋都是炸的, 比较油腻..可是香又好吃!!
但是这个烤多拿滋也很不错哦! 口感比较蛋糕式和柔软.

The one here is with coated cinnamon sugar and the back one is without coating.

Recipe ( from the book, Back in the Day Bakery )
makes 24 mini muffins (i make 22 mini muffins)


Ingredients:187 gm all purpose flour (i used cake flour)
1/8 tsp baking soda
1 1/4 tsp baking powder

¼ teaspoons Ground Nutmeg (i did not add)
¼ teaspoons Ground Cardamom Or Ground Cinnamon (i did not add)
1/4 tsp fine sea salt
1 tbsp buttermilk ( i used 1 tbsp full cream milk + 1 tsp lemon juice )
110 ml whole milk/full cream milk
56 gm unsalted butter, softened
60 gm sugar
1 large egg

For doughnut coating
56 gm unsalted butter, melted
1/2 cup sugar mixed with 1/2 tbsp ground cinnamon

Method:

  • Position a rack in the lower third of the oven and preheat oven to 177C. (i set mine to 180C and bake for 23 minutes) Grease and flour the muffin pans
  • Sift together the flour, baking soda, baking powder, salt . In a medium bowl, combine the milk and the buttermilk or yogurt.
  • In a large mixing bowl, cream the butter for 2-3 mins using a handheld mixer on medium speed. Reduce to low and gradually add in the sugar. Continue to mix until mixture lighten in colour. Add the egg, beating until  just combined. Add the dry ingredients in 3 batches, flour, milk and flour mixing just until smooth , do not overmix.
  • Scoop the batter into the prepared muffin tray, filling approx 2/3 . Bake for 20-25 minutes, until the tops are firm and lightly golden. While the muffins are baking, prepare the melted butter in one bowl and the cinnamon sugar in another bowl. Let the doughnut cool completely on a wire rack, dunk them in the melted butter, then coat them with cinnamon sugar. 
** a little tips: I add sugar and cinnamon into a small plastic container, shake them to combine well. Add in a dunk doughnut muffin into plastic container and shake well to let the sugar cinnamon coat well on the doughnut muffins. Coat 1-2 doughnuts at a time to have nice and neat coating.

    Your youngest boy is so sweet being your most faithful supporter. If my boy don't support me, my face will be black black :p

    I always have my standard cup to gram conversion straight in my mind and apologize that I didn't include them in my recipe. Unless I made dramatic changes, I would rather readers see the recipe as it is published in the book. Very nice petite doughnuts!

  6. Mui Mui, lovely muffins you have. I should use castor sugar instead of icing sugar.. Just coincidence out of stock, so used icing sugar.

  15. morning doreen, dont mention on the converted recipe. I have actually reduced the amount of sugar for the batter, that's why it's not sweet on its own :) and as i was telling mich, the cinnamon sugar had given the donuts a delicious coating! thanks so much for baking again with us! appreciate that and have a good coming weekend!

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy. Add in B, one egg at a time and blend well. 2)
