Ginger cookies ~ 姜奇曲

My mum is a big fan of ginger cookies. When ever i go to Brunei i will grab a pack or two for her. She love the crunchy  bite and the hint of spice in this cookies. This time she complain that the last packs of ginger cookies i bought for her was not as nice as before. I never thought of making my own ginger cookies but  for my mum to enjoy a nice cookies and for Little Thumb Up i got to make my own Ginger cookies.

I found this ginger cookies recipe from one of the recipe book hibernating on the book shelf from last winter..:p After reading the ingredients and method, i start right away since i have all the ingredients in my pantry. Everything goes pretty smooth. No mixer needed only mixed and roll with bare hands. 

When it comes to baking the cookies, i baked following the recipe. That is 200C for 10 minutes BUT the cookies comes out lightly brown, crunchy side BUT BUT chewy center. I was wondering is this cookies meant to be like this???? No no no, i remember those store bought ginger cookies was crunchy not like what i have now. I quickly seek for help...:D
Zoe came for the rescue..(i actually watsapp her to ask whether i have under-bake my cookies)
She suggested that i re-bake the cookies a little bit longer.Which later i did, i baked for another 10 minutes at 180C. This time the ginger cookies is super crunchy.

Nice ginger cookies!! I love the taste BUT if it is a little bit more ginger this will be prefect.

妈喜欢那姜饼的香气和脆脆的口感. (吃起来, 感觉像是核桃酥的口感只是味道不同)
闲着拿一片咬一咬真的超享受呢!!
第一次做这种姜饼. 以前做的是圣诞绘画姜饼. 两者很不一样哦!!
从外表到口感来比较都很大分便..

Simple and wonderful ginger cookies :D

1) Rub the butter into the dry ingredients ..looks like bread crumbs
2) Add in water and golden syrup.
3) Mixed and mixed..Just mix and roll, do not knead,
4) Form into a dough. 


Divide into walnut-sized pieces and press with your thumb in the middle to flatten it. Arrange on a prepared baking tray.

Even my youngest love this ginger cookies. He would ask for a piece whenever he saw the cookies jar :D

Ginger Cookies
Recipe source, from a book: Best Ever Recipes Cookies by Phoebe Gibb
Makes 30-40 cookies

Ingredients:
220 g plain flour
2 tsp baking powder
2 tsp ground ginger  ( I used McCormick)
1cm fresh ginger, grated ( I added)
1/2 tsp bicarbonate soda ( I omit this)
100 g butter (I used unsalted)
100 g castor sugar (I used 70g)
2 tblsp golden syrup
1 tsp water 

To Do:
  • Preheat oven at 200C (400F) Lined 2 baking sheets with grease proof paper. In a large mixing bowl sift in flour, ginger, bicarbonate of soda ( I am not using) and baking powder.
  • Using your fingertips, rub in the butter. Add in sugar, grated ginger (if you are adding) and stir well. Finally add in golden syrup and water.
  • Mixed and roll mixture into a dough. Divide into walnut-sized pieces. Place onto the prepared baking tray and press your thumb into the middle to flatten each one. Bake for 10 minutes. (I found that after baking for 10 minutes my cookies is still soft in the middle so I bake again at 180C for another 10 minutes.) 
  • Transfer them to the wire rack to cool. Keep them in an air tight container. It can be keep for a week. ( Mine was gone in 3 days :p)

    I laughed after seeing this, "Zoe came for the rescue"... Very funny seeing the way you wrote sounds like I'm the superhero or something - LOL!

    I think the texture of gingerbread or cookies can be very subjective to individual preference. Ironically, my colleague always under-bake her ginger cookies as she prefer them being soft. But, your mum likes the munch-munch kind :D

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
