This is a good pick from Joyce to bake in this round Bake Along #40. It is a Banana Nut Bread. My eldest love banana bread or cake i assumed he will love this too. But i am wrong he doesn't like it :O Not the bread is not nice, it is the cinnamon that he doesn't like. For the rest of us, we like it.

I am a little confused whether to call this a bread or a cake?? But the name of this is Banana Nut Bread so be it a bread...:D Again it taste more like a cake to me:p

Banana Nut Bread
(adapted from "The Williams-Sonoma Baking Book")
Makes one 9 by 5-inch loaf (i bake mine into 1 long loaf tray 23.5 cm x 7.5 cm
small loaf tray 16.5 cm x 7 cm)
6 tbsp (90gm) unsalted butter, at room temperature
1 cup (250gm) sugar (I use 150gm brown sugar)
2 or 3 very ripe bananas, coarsely mashed (about 1-1/2 cups / 280gm)
3 large eggs, lightly beaten
1/2 cup buttermilk (I use a mixture of evaporated milk and a 1/4 lemon juice)
2 cups (315gm) all-purpose flour (I use 250gm)
1 tsp baking soda (I use 1/4 tsp)
1 tsp baking powder (i used 1 1/2 tsp)
1 tsp ground nutmeg (i used 1/4 cinnamon powder)
1/2 tsp salt
3/4 cup (90gm) coarsely chopped walnuts, pecans, or hazelnuts (I use chopped walnuts)
- Preheat the oven to 350F (180C). Grease and lightly flour a 9-by-5-inch loaf pan. (i lined my loaf pan with parchment paper)
- In a stand mixer fitted with the paddle attachment, beat together the butter and sugar on medium speed until creamy, about 1 minute. Add the bananas and eggs (and vanilla extract, if using) and beat until smooth. Add the buttermilk and beat just until combined.
- In a bowl, stir together the flour, baking soda, baking powder, nutmeg, salt and nuts. Add the flour mixture to the banana mixture and beat just until combined. The batter should be slightly lumpy. Scrape down the sides of the bowl.
- Pour the batter into the prepared pan. It should be no more than two-thirds full. Bake until the top is dark golden brown and dry to the touch and the edges pull away from the pan sides, about 55-60 minutes. (i baked mine for 50 minutes) A cake tester inserted into the center should come out clean. Let the bread cool in the pan for 5 minutes, then turn it out onto a wire rack and let cool completely. Cut into thick slices to serve.

ReplyDeleteLovely dense & moist banana cake. I always replace yogurt with buttermilk as i don't really know what to do with the rest of the 1 liter buttermilk after baking a cake. I like your idea using evaporated milk & lemon juice; Will try that next time!
