Kerabu Pelam ~

Another exciting month of Malaysia Food Feast(MFF). After the previous Terengganu month have ended here comes the Kedah and Perlis month host by Wendy of Table for 2 or...more
I am like chasing after a  Korean/Japan drama episodes but this is MFF episodes. I am starting to appreciate more and more authentic Malaysian food from MFF. I am going to share a dish from Kedah. This is a dish i learn from Phong Hong Bakes, KERABU PELAM / MANGO KERABU
From what i understand kerabu means a mixture of ingredients (vegetables/ fruits/  rice/ meat etc) that mixed together with a dressing.

I do agreed with Phong Hong adding the anchovy fillet really taste so awesome. I also like the plum sauce that she added it gives the tangy with a hint of sweetness in the kerabu.

Kerabu Pelam/Mango Kerabu
recipe source: Phong Hong Bakes

  • In a bowl mix lime juice, fish sauce, anchovy fillet and plum sauce. Add a few slice of shallots to the dressing and set aside.
  • Place shredded mango, cube tomato, shallots, chilly and dried prawns in a mixing bowl.

    1. Hi Wendy,
      Thanks for compliments.
Yes, i do thought of shredding using a knife or peeler the next time. Grating does put lot of pressure toward the poor mango and it becomes watery..:p

A Sarawak Cake ~ Cake Hitam

Sarawak is famous of its' Steamed Cakes and Layer Cakes (Kek Lapis). Steamed Cakes in Sarawak are mostly steamed for hours. I have done a steamed cake that took me 7 hours to cook. Can you imagine that!!  Crazy me!! I can't believe that i have done it just because i love that particular cake so much. I have tasted the cake in a Malay friend's house while go visiting on a Hari Raya. The name of that Cake is Kek Hati Parek. This Malay friend of mine, she is so so kind to share her recipe to me. This will be share in future. Just add adequate of icing sugar/castor sugar to the whipping  cream and whisked it to light and fluffy. Then mix in any flavor that you like into the cream and piped it into the cake. Ayam Masak Merah ...

Ayam Masak Merah  is a Malay dish named Malay Red Cook Chicken.  The red colored comes from the tomato ketchup/puree and chilies.  I know my kids loves tomato and this dish is cooking with tomato ketchup. Oh!! they will love this tasty, yummy Red Cooked Chicken. One thing i am worrying is that, this dish will be spicy so i decide to cook the kids version by reducing the chillies to the lowest amout, that is 1/2 a chilli. The result is wonderful..my kids love..love..love this :) What do you think of this dish?? Don't you think this red colour is so makes this dish looks so inviting!! Cooking this is no fuss at all. It is simple or maybe you need to blend the shallots, ginger and chillies.  First marinate the chicken ( i used 2 large chicken maryland and i chopped into 2) with turmeric ...
