Jamie Oliver's Pancake ~ Cook Like a Chef (July 2012)

Pancake is a very light and simple snack. Can i say that?? But it can be very delicious. Shawn, Samson and Seanan loves pancake, i used to make the Nigella version for them..here..They like it plain but sometimes i do spread a little something for them.


This time i wanted to do another version for my boys, that is Jamie Oliver's version. I found Jamie's version is so fluffy, soft and thick. Fillings can be added while cooking  and that is so cool..^^ 


This pancake can be made to prefection straight away. Simple, simple, simple and my Jools (for me is my boys) goes mad for them..hehe this is how Jamie express his pancake...^^ 


 ~Add 3 small balls of my homemade cream cheese mango ice cream and drizzle with some  honey ~

 ~This is Shawn's snack box for him to bring to school for morning break
He like his with a spread of Nutella~

 ~This is Samson's snack box
He like his with a spread of strawberry jam~

 ~This is for Seanan snack box to bring to nanny's house~

Pancakes
Recipe from Jamie Oliver (The Naked Chef 2)
Ingredients:
3 large eggs
1 cup flour (122 grams)
1 heaped tsp baking powder
1/2 cup milk (110ml)
pinch salt

To do:
1) Separate the eggs, putting the whites in 1 bowl and the egg yolks into another.
2)  Add flour, baking powder and milk to the egg yolks and mix into a smooth thick batter.
3) Whisk egg whites with the salt until they form stiff peaks. Fold into the batter and it is ready to use.
4) Heat a non stick pan on a medium heat. Pour a little oil (i used melted butter) onto some kitchen paper and spread onto the pan. Pour some batter into the pan and fry for a couple of minutes until it starts to look golden and firm. At this point, sprinkle your chosen flavouring( i used frozen blueberries) onto the uncooked side before loosening with a spatula and flipping the pancake over. Continue frying until both side are golden. 




 ~Pancake with honey and home made cream cheese mango ice cream..what do you think??

~Just break into half and sandwich with drizzle of honey..taste so nice~

    Mui Mui, here's a Canadian pancake recipe for you.
    Canadian Sweet corn pancakes.

    Ingredients
    6 eggs, separated (Note: to separate eggs, crack the egg and allow just the white to fall into a bowl, holding the yolk in one of the shell halves.

    Transfer the yolk back and forth between the two shell halves, being careful not to break it, until all the white has dripped into the bowl. Put the yolk into a separate bowl.)

    ¼ cup half-and-half
    1 Tablespoon sour cream
    ⅓ cup flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    ½ cup corn (may be fresh or frozen corn kernels)
    Vegetable oil to oil the pan

    Procedure
    Beat the egg whites until they hold soft peaks when the beaters are lifted up.
    In another bowl, combine the egg yolks, half-and-half, and sour cream.

    Gradually add the dry ingredients to the egg yolk mixture. Add the beaten egg whites, using a gentle stirring motion to combine them with the yolk mixture.

    Add the corn, and stir gently. Pour a small amount of oil into a non-stick pan and heat it over medium heat.
    Drop batter, about 1 Tablespoonsful at a time, into the pan for each pancake and cook until golden brown on each side.
    Have fun.

    Thanks! This is a great snack for kids. It is light and you can spread or add on what ever filling while cooking it. Try sweet corn it is really nice. 孩子会很喜欢吃噢(^.^)

Old Fashion Kopi Tiam Bread Loaf 古早咖啡店面包

This is an old fashion kopi tiam (coffee shop) bread loaf. It has coarse texture but it is so soft and nice! This coarse texture kind of bread bring back many child hood memories! We use to have this type of bread in the local coffee shop. They will take two pieces of bread, make into a kaya butter sandwich, ( a piece spread with butter and the other piece spread with Kaya.) Chewy Korean Mochi Bread ... (QQ 韩式麻磁面包)

I have been wanted to bake this Korean mochi bread for quite sometimes but did not take any action until a friend of mine ask about it. She sent me a pack of this Korean mochi bread premix and ask me to try. Thanks to LK for sending me the pack of Korean mochi bread premix.
