Too-Easy Bluberry Muffins~

I have never make blueberry muffin before. Can you believe it...:p 
I have thought of making this muffin a few times but never lay my hands on it..until now WHY now??  Because...
when I first saw the 'Cook like A Star' blog hop in Zeo's place, I am so excited and wanted to join. I started to browser in Donna Hay website hope to find a recipe that I like and it is easy to follow. I found this:

~my frozen blueberries~

I said to myself, this is the one I want to make.
I live in Malaysia, in a very small town named Miri. It is very hard to get fresh blueberries here and not even frozen ones. The next day I went to the local fruit stall, guess what?? I am so lucky they sell fresh blueberries. I bought a box, came home and found that the recipe need 300 grams of blueberries and I only have 125 grams of a box. I packed and freeze the blueberries and hope to get another box the next day. Unfortunately, they are all sold out. I have no choice so I make half of the recipe.

Challenges comes again, hahaha what happen?? When I make the muffin I used bread flour instead of self raising flour (clumsy me)..the muffins turn out to be.... I guess you know what it became.

 I can't join the blog hop with a unsuccessful Blueberry Muffins. I decided to make the muffins again. This time I get it right and it is really really muffin...just nice and it is just like its named 'Too-Easy Blueberry Muffin'... too-easy to make.



Too-Easy Blueberry Muffins 
This is the original recipe from Donna Hay recipes ..
Ingredients:
375g self-raising flour. sifted
1 tsp baking powder
220g castor sugar
125ml vegetable oil
1 egg
125ml milk
1 tsp vanilla extract
300g frozen blueberries
granulated sugar for sprinkling

Method:
1) Preheat oven to 180c (350F). Place the flour, baking powder and sugar in a bowl.
    Place the oil, egg, and vanilla in a separate bowl and whisk to combine,
    Pour the liquid ingredients into the dry ingredients and mix until just combined.
    Add the blueberries and mix to combine. 


~Adding in the frozen blueberries.~
Spoon mixture into a 12-hole muffin tin lined with paper patty cases. (I used silicone cups lined with paper patty cases)


~These are going to the oven..for 30 minutes. ~

    Sprinkle the tops with sugar and bake for 30-35 minutes or until cooked when tested with a skewer. Remove from tin and cool on a wire rack.


I am joining the 'Cook Like A Star' blog hop event for March 2012 host by Bake For Happy Kids....Oops!! I only realize that the collection is close :(
Anyway, I learn a lot from this recipe and I love to make this Too-Easy Blueberry Muffins again. Next time might try, change to other fruits that is more easy to get in my town.

  1. I like to bake with berries too. However the $ of any berries here(Kuching) is expensive! A box around 200g sure costs more than Rm15! Can't find frozen one. So not sure the $. Anyway how much you pay for the 125g blueberries ? Really like to have some of your lovely muffins ^^

  2. Thanks Viv. I manage to buy the 125g for rm15 in the local fruit stall. Before that I went to Giant they are selling 125g for rm20.99...can you imagine that??

  3. If not mistaken the price for berries is a lot cheaper in Peninzular. Wow! $15 for 125g if me 不奢的买咯。
    Nope, we (hubby and I) are from Penizular. Follow my hubby ever since he work in Kuching.

  4. Viv, really a lot cheaper in Peninsular. I remember when I go to KL for a visiting, I did see some in the supermarket is so much cheaper.

    Are you still in Kuching nowadays following your hubby?

    这是特质的silicone cups..
    可以进烤箱的还可以耐220c
    起初用是也怕它会溶化,不过用用下就不会了。

I baked this cake once, twice, thirce and now i lost count BUT everytime i bake this cake i feel HAPPY.
