Santa on the Log cake..^^

This year's Christmas Day seems a bit hard for me to be merry. A closed friend passed away...:'( She is a very nice person and she encourage me when I first started my career. She have been a good friend and a teacher to us since we know each other. 
Today (25/12) is her buried day.
May SB rest in peace.
We will always remember your caring, your loving and your teaching  in our heart .

今年的圣诞节, 快乐不起来. 一位我最敬爱的领导间好友去世了...:'( 她是位非常贤惠, 非常好的人, 在我刚开始创业时是她不断的鼓励我. 她是我们的老师也是好朋友. 想起当年我们还是单身,还没家庭. 没想到如今她走了, 我们会很想念她。

I made this Santa on a Log cake a day before I heard the news that my dear friend had passed away. If I am to do this after I heard the news I would not have the mood to do so.
This cake is to bring over to another close friend (LK) also a close friend to (SB).... for a  Potluck cum her birthday party before the breaking news too.

~Santa on the Log cake...圣诞老人幹蛋糕~

A: 巧克力蛋糕体
(a): 面糊:
6g  蛋黄
25g  幼糖
35g  植物油~我用花油
70g  低筋面粉
40g  无糖可可粉
50cc  鲜奶
1T  白兰地

(b) 蛋白霜:
 6  蛋白
1t   柠檬汁
70g  幼糖

(c)  原味鲜奶油
30g  幼糖
1t   白兰地
400cc  动物鲜奶油
打法鲜奶油: 将细砂糖与白兰地加入鲜奶油中, 用搅拌以低速度慢慢打至尾端挺立的程度, 然后放入冰箱冷藏.

B: 巧克里栅栏
30g  巧克力砖

C: 糖人
1/2 个  蛋白(约 15g)
100g  纯塘粉

做法 (A制作巧克力蛋糕体)
1)  将蛋黄加细砂糖先用打蛋器搅拌均匀. 
2)将蛋黄和砂糖用打蛋器搅拌均匀。 加入植物油拌匀,加入筛好的粉类及牛奶,白兰地分两次交错的加入较拌均成为无粉粒的面糊。
3)把蛋白打出一些泡,然后加入柠檬汁及幼糖(份两次加入) 打成尾端稍微弯曲的的蛋白霜。
4) 挖1/3份量的蛋白霜混入蛋黄面糊种。用橡皮刮刀搅拌均匀,然后再将拌匀的面糊倒入蛋白霜中混合均匀。 (用橡皮刮刀由下而上翻转的方式。
5)倒入铺上烘焙纸的烤盘中。用刮板抹平整。轻敲,敲出大气泡。放入以预热170c 的烤箱,烘烤10-12分钟。
6)  蛋糕烤好後, 将四周烤焙纸撕开散热.
7) 散热后把部纸撕开, 把蛋糕烤面向上, 将蛋糕平均分成三等份. (我的烤炉小我是用12"x9"的烤盘所以我分成两等份.)
8) 将夹心馅鲜奶油均匀的涂抹在蛋糕上. 在蛋糕第一片开始捲起处切2~3条不切到底 (这样捲的时候中心不容易裂开)
9) 一片蛋糕接着一片蛋糕紧密捲起, 成为一个筒状.

10)  整个蛋糕表面用鲜奶油涂抹均匀. 在把周围的鲜奶油用刮刀随意刮出一些树 纹.
11) 蛋糕顶部用叉子刮出树轮. 简单的树幹造型就完成了.
12) 依照个人喜好, 用水果和糖人做装饰.

(B. 制作巧克力栅栏)
13) 巧克力用隔水融化. 把巧克力浆倒入挤花袋.
14) 把巧克力浆挤在一片透明的硬性的胶纸上, 在卷起, 用胶带固定放入冰箱5分钟.
15) 冰硬取出就是弯曲的巧克力栅栏.

(C:  制作糖人)
16) 将蛋白倒入糖粉中.
17) 用手慢慢将蛋白与糖粉混合均匀成为一个不黏手的团状.
18) 如果太黏可添加糖粉(不要太濕软, 否则糖会塌)
19) 取部分糖霜分别加入颜色(红和咖啡) 调和圣诞老人衣服和脸的颜色.
20) 依照个人喜好捏出圣诞老人, 在用黑芝麻装饰做为眼睛.

Old Fashion Kopi Tiam Bread Loaf 古早咖啡店面包

This is an old fashion kopi tiam (coffee shop) bread loaf. It has coarse texture but it is so soft and nice! This coarse texture kind of bread bring back many child hood memories! We use to have this type of bread in the local coffee shop. They will take two pieces of bread, make into a kaya butter sandwich, ( a piece spread with butter and the other piece spread with Kaya.) Crispy Prawn fritters...香脆炸虾卷

 This book have been sitting in the recipe book shelf for ages.  It is a Yum Yum magazine, a full colour and step by step wonderful recipes magazines. Every two months a new one comes, the old one will be left sitting behind in the book shelf...:p Sometimes I will take out the previous volume to read. Today i am running over the old volumes again. I am looking for.... this Crispy Prawn Fritter recipe .....'Bingo' I found it in Volume 44 Issue 2006. Just happen that my hubby's good friend gave us some prawns. I tried this and it is really good. You must try this too...^^ Crispy Prawn Fritters Ingredients: 600g medium prawns, shelled but with tail intact 1500ml cooking oil for frying Marinade: 1/2 tsp salt 1 tsp sugar 1 tsp sesame oil Dash of pepper Batter A 150g plain flour 1 tbsp corn flour 1 tbsp tang mein flour 1 tbsp baking powder ( I used 1 tsp double action baking powder) 1 tsp salt, 1 tsp sugar Dash of pepper B: 1 tsp sesame oil 6 tbsp oil
