White chocolate n Blueberry CheeseCake

I have been busy with my little ones recently. Its 5 months now since the arrival of my youngest son Seanan. He really bring so much joy to the family. Today finally I have a few hours of free time so was taking this opportunity to do this White Chocolate n Blueberry CheeseCake.


This is my White Chocolate n Bluberry CheeseCake.



Ingredients for the base:

250g digestive biscuits~crushed finely
100g butter~melted
Method:
1) Crushed the biscuits with a rolling pin or blend it in a blender, finely. Melt butter and mix in the biscuit crumbs.
2) Press firmly in a 9" spring form baking tray and put in the refrigerate until the filling is ready.

Ingredients for the filling:
500g cream cheese~I use Kraft brand
100g sugar
150g white chocolate~Double- boil to melt this chocolate
5 eggs
180g sour cream
1 tbsp lemon juice
1 tsp lemon zest
1oog dairy whipping cream
125g blueberries

Method:
1) Preheated oven at 160c. Beat cream cheese and sugar till soft and creamy.
2) Add in the melted white chocolate.
3) Beat in eggs, one at a time.
4) Pour in whipping cream mix to combine.
5) Pour in sour cream, lemon juice and lemon zest mix to combine.
6) Put all the scattered the blueberries around the base ~ biscuit crust.
7) Pour the cheese filling slowly into the base. (Do pour in gently to prevent the blueberries from runing to the side of the crust.
8)Steam bake or water bath this cake at 160c for 70 minutes or until filling is set at edge and slightly soft in the centre.
**I uses a 9" spring form baking tray to bake this cake.


This cake is my son, Samson's favourites. He could eat this whole piece by himself.....^^


I like the natural colour of the blueberries is so lovely.

Old Fashion Kopi Tiam Bread Loaf 古早咖啡店面包

This is an old fashion kopi tiam (coffee shop) bread loaf. It has coarse texture but it is so soft and nice! This coarse texture kind of bread bring back many child hood memories! We use to have this type of bread in the local coffee shop. They will take two pieces of bread, make into a kaya butter sandwich, ( a piece spread with butter and the other piece spread with Kaya.) Chewy Korean Mochi Bread ... (QQ 韩式麻磁面包)

I have been wanted to bake this Korean mochi bread for quite sometimes but did not take any action until a friend of mine ask about it. She sent me a pack of this Korean mochi bread premix and ask me to try. Thanks to LK for sending me the pack of Korean mochi bread premix. This premix is not cheap, a pack of 550g cost rm12.50.  本想老早就来玩玩这麻磁面包担是就一直没行动 :p 友LK拿一包韩式QQ面包预拌粉给我,就赶快试一试吧!! Nice looking little buns, my second ask me "mummy, its this some kind of DINO eggs??"
