Samson's Birthday ^0^

Hi everyone I am Samson. Yeah.....is my birthday...^0^




Samson's birthday falls on the 3rd of January. He is looking forward to invite his god parents, his parents friends and most of all his school mates. Unfortunately, school start on the 4th, so he can't celebrate his birthday in school with all his school mates. Anywway, he is happy too, to
have uncle Peter, auntie Lena, godpa Alan, godma Angie, god che che Ashley, uncle Xiao Her, auntie Pei Yan, say yi chong Loong Hin, say yi Connie, cousin ah Hung and ah Yee koko. Samson wanted a Ultraman cake for his birthday. I made him a Durian Dream Cheese Cake with Ultraman picture....... ^^

This is a 2 kg Durian Cheese Cake and is really yummy.


Durian Dream CheeseCake
Ingredients for the sponge cake:
125g sponge mix
125g eggs
62.5ml water
62.5ml melted butter

Method:
  • Preheated oven at 180c. Beat sponge mix and eggs in low speed for 2 minutes. Pour in water and beat in high speed for 5 - 6minutes. Fold in melted butter.Pour into a 9" lined baking pan. Bake for 30-35minutes.

Biscuits base ingredients:
200g "biskuat" tiger biscuits/sweet biscuits
100g butter~melted
2 tbsp cocoa powder

Method:
  • Crushed the biscuits into crumbs, mix in cocoa powder.Pour in melted butter, mixed well. Pour into a 9" loose bottom baking tray.Pressed and chilled for 30mintues.
Ingredients for durian filling:
  • 125ml fresh milk
  • 1 tbsp castor sugar
  • 100g castor sugar
  • 2 tbsp custard powder mixed with 2tbsp milk
  • 2 tbsp gelatine powder
  • 250g cream cheese
  • 500gdurian flesh
  • 300m thickened creme
  • some cocoa powder for dusting
Method:
  • Stir milk and sugar together until sugar dissolved. Bring to a boil and pour in custard mixed, stir well. Stir mixture in a pan of simmer water until thick and smooth. Remove from the heat and stir in gelatine. Stir in durian when mixture has cooled.

  • Beat cream cheese and sugar until smooth. Blend in cream and durian mixture, mix well.

  • Pour half of durian filling into the prepared biscuits base, layer in the sponge cake and pour the other half of the durian mixture.

  • Cover the cake with cling wrap and refrigerate overnight before removing from pan. Dust with cocoa powder and serve.

Hokkaido Chiffon Cake - A Cake that will make you Smile (Bake Along #64)

I baked this cake once, twice, thirce and now i lost count BUT everytime i bake this cake i feel HAPPY. Hope this happy thoughts and feeling will spread to YOU ^_^ Happy that the cake rise beautifully and with almost no shrink or crack. Happy that my boys and friends love this cake. I am going to Bake Along with these 3 beautiful ladies again.  This is a revisit of this recipe - HERE The previous post of Hokkaidao chiffon cupcake, i used durian cream as filling. Now in this post i used vanilla whipped cream/Chantilly cream as filling. I love to use dairy whipping cream as filling. Just add adequate of icing sugar/castor sugar to the whipping  cream and whisked it to light and fluffy. Then mix in any flavor that you like into the cream and piped it into the cake. Ayam Masak Merah ... 香辣红番茄鸡

Ayam Masak Merah  is a Malay dish named Malay Red Cook Chicken.  The red colored comes from the tomato ketchup/puree and chilies.  I know my kids loves tomato and this dish is cooking with tomato ketchup. Oh!! they will love this tasty, yummy Red Cooked Chicken. One thing i am worrying is that, this dish will be spicy so i decide to cook the kids version by reducing the chillies to the lowest amout, that is 1/2 a chilli.
