My good friend's birthday

This is a New Year and new vision year 2010. Have been 3 months since my last post. Guess, wat I am doing. I am in confinement in November 2009, for a month and taking care of my new born baby boy for a month. Haha...now here.... I am back ^^. My good friend's Yan birthday is in December, I wanted to make a special cake for her so I choose this Durian Dream Cheesecake.




I made a 6" miniature durian cheesecake for her and an extra 6" cake for us. I use fresh durian flesh for this cake. No artificial flavour at all. I uses Thai durian, given my brother in law. The Thai durian flesh is big, yellowish in colour, thick, sweet and smell so so nice. Simon wanted to eat it so much but I insist that I wanted to use it or my durian cheesecake.

Durian Dream CheeseCake

Ingredients for the biscuit base :
200g 'Tiger' biskuat biscuits
110g butter~melted
2 tbsp cocoa powder

Method:
  • Crush the biscuits into bread crumbs form.
  • Mix cocoa powder with the biscuits crumbs. Pour melted butter into biscuits crumbs mixed well and press into a 7" loose bottom round cake tin. Chilled in refreigerate while preparing the filling.
Ingredients for the filling:
125ml milk
1 tbsp castor sugar
2 tbsp custard powder mixed with 2 tbsp milk
2 tbsp powdered gelatine dissolved in 100ml water
500g durian flesh
100g castor sugar
250g philadephia cream cheese ~ diced
300ml thickened cream
cocoa powder for dusting
Method:
  • Stir milk and sugar until sugar has dissolved. Bring to the boiled and remove from heat. Pour in custard powder mixture and mircowave(100p) for 30 seconds stir well, again another 30 seconds and stir or Stir mixture in a pan of simmer water until thick and smooth. Remove from heat and stir in gelatine. Stir in durian when mixture has cooled.
  • Beat cream cheese and sugar until smooth. Blend in cream. Mix in durian mixture. Pour durian mixture into the prepared biscuit base. Cover with cling wrap and refrigerate for at least 6 hours or overnight before removing from pan.
  • Dust with cocoa powder and serve.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
