Mock Cream 简易牛油 淇淋

This is a simple and versatile kind of frosting that you will love. I love it after trying once, i know you will love this too.

It  is the MOCK CREAM. It is a blend of butter, icing sugar and some boiling water.





Mock Cream

Makes 1 heaped cup (about 250g) cream
Ingredients
125g butter, softened
75g (1/2 cup) icing sugar mixture
1/2 teaspoon vanilla extract
40ml (2 tablespoons) boiling water
20ml (1 tablespoon) water at room temperature



To Do:
Mix boiling water and room-temperature water; set aside. Cream softened butter and icing sugar until light, pale and fluffy. Beat in vanilla. Gradually add the warm water, one teaspoon at a time, and beat well to incorporate after each addition. As you add the water and beat, it might be a good idea to beat by hand (or using the lowest speed if using electric beater) to prevent the water splashing about.
(I am using a hand mixer on the lowest speed )

I am using this cream for my Pandan Ogura Cake.

      Yes it is. Only that this is lighter and smoother with the addition of Hot water.

  5. I saw this cream in a cookbook earlier , I was wondering how can buttercream by adding hot boiling water, scare the cream become melt, hehehe..so in fact it can work huh, next time must try this quick and easy way .,

      I have the same feeling too when I look at this recipe. Actually if you look at the recipe it says 40g boiling water mixed with 20g room temperature water so it's like warm, not hot.. :p
      Anyway, I love this, it is smooth and nice: )

      This cream will stay in room temperature for a few hours, about 2-3 hours.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake.
