Tres Leches Cake ~ Bake Along #43

Tres Leches cake is something new to me again. 'Tres Leches' translates to 'three milks' the cakes soaked in three types of milk. Interesting right??
Tres Leches cake 是种拉丁美洲的蛋糕. 简单的海棉蛋糕体浸泡在3种奶. 让蛋糕把奶都吸入蛋糕内.很有趣的蛋糕吧!!

Three milks that is evaporated milk. condensed milk and  heavy cream. The cake then soaked in this combined milk for 30 minutes but i left mine in the fridge overnight. 
To my surprise the next day the cake is moist and not soggy.
用了3奶...练乳(红字牛奶), 淡奶和鲜奶油混合拌均)把蛋糕泡上30分钟或让奶类完全吸入.
我把蛋糕放入冰箱,隔天才切. 很特别哦!! 隔天蛋糕是柔软不湿的.

 The texture of the cake is moist and spongy. My kids love it!! Maybe they love the 'three
milks'..LOL
蛋糕的组织棉蜜像吃轻乳酪蛋糕呢!! 宝贝们很喜欢!! 还是宝贝们喜欢那3种奶呢..:p

My youngest really know how to enjoy his cake. He add some strawberry yogurt on his piece of Tres Leches cake..: ) 小宝贝很会享受呢,他还加了草苺优格一起吃 ><...

Tres Leches Cake
(adapted from The Pioneer Woman)
For the batter :
1/3 cup all-purpose flour
1/2 tsp baking powder
pinch of salt
2 whole eggs
scant 1/3 cup sugar, divided
1/2 tsp vanilla
80ml milk

For the milk mixture:
2/3 cup evaporated milk
1/4 cup condensed milk
2 tbsp heavy cream
1 tsp rum (Joyce's addition but i did not add this)

For the frosting :
3/4 cup heavy cream
1 tsp caster sugar (i did not add sugar i just leave the cream plain)

Preheat oven to 350degreesF. Grease and line a 8 x 4-1/2 inch loaf pan with parchment paper.
For the batter :
Combine flour, baking powder, and salt in a large bowl. Separate the eggs.
Whisk egg yolks with the sugar (leaving about 2-3 tbsp to use for the egg whites later), on high speed until yolks are pale yellow.
Stir in the milk and vanilla. Pour egg yolk mixture over the flour mixture and stir very gently until combined.
Whisk egg whites on high speed until soft peaks form. With the mixer on, pour in remaining sugar and beat until egg whites are stiff but not dry.
Fold egg white mixture into the batter very gently until just combined. Pour into prepared pan and spread to even out the surface.
Bake for about 30 minutes or until a toothpick comes out clean. Turn cake out into a rimmed platter and allow to cool.

For the milk mixture :
Combine condensed milk, evaporated milk, heavy cream and in a small pitcher. (i follow Joyce use a mini hand-held whisk to whisk everything together). When the cake is cool, pierce the surface with a fork several times. Slowly drizzle the milk mixture over the cake - try to get as much around the edges of the cake as you can.
Allow the cake to absorb the milk mixture for 30 minutes.


For the frosting :
Whisk heavy cream with sugar until thick and spreadable.
Spread over the surface of the cake. Decorate cake with whole or chopped glazed cherries. (i just sprinkle with some cocoa powder)

  7. I really like your blog.. you have inspired me a lot. .. just wondering if you ever made red velvet cake.. one that is super moist..mind sharing some recipe... I want to do it for my mom birthday..since she saw a picture of it I really want to please her..

    What a coincidence, I have just made some red velvet cupcakes from natural coloring that day. It is moist and healthy type.
