Mango Cream Cake ~芒果鲜奶油蛋糕

Hi, Hi, Hi, i would like to Thank Jozelyn from Spice Up my Kitchen for hosting for Little Thumbs Up ~November. First, my apologize to Jozelyn for my super late post. It has been quite a super duper pack month for me. Hope that i can post more after this. Second, i also like to thanks to all dear friends who share their wonderful recipes to Little Thumbs Up events and Best Thumbs Up Recipes in facebook. Thank you!!! :D

My family is a big fan of mango. Especially my boys, they love mango very much. Anything with mango they will love it! My mil's birthday falls in this mango season. It is great to have fresh mango around to make her a mango cream cake. The cake taste just the right sweetness, with dairy whipped cream as frosting and sandwich in-between are fresh cut mango slices. Yummeh!!
Mango Cream Cake
 A simple cake for a special person.
Love the soft, fluffy sponge cake, which pair well with 
whipped cream frosting and the sweet mango slices

See, see, see it crack like nobody :p
luckily it is still soft, fluffy and spongy!
Trim away the crack top;
Start slicing it into 3 layers;
Yeah! nice 3 layers;
First layer on the plate;
Apply adequate of whipped cream on and place slice mango;
Add more slice mango and follow with second layer of cake;
Last piece of cake and apply balance whipped cream onto
the whole cake and smooth out with a spatula knife.
Mango Cream Cake                   
Sponge cake adapted from nasi lemak lover
makes one 7 inch cake (use loosen bottom baking pan)

Ingredients:
4 egg yolks (large)
20g castor sugar
50g corn oil
60g milk
1/2 tsp vanilla extract
90g cake flour

4 egg white
1/2 tsp lemon juice or 1/4 tsp cream of tartar
60g castor sugar

For decorations:
2 mangoes; slice one into thick long strips and cut some into cubes about 1/2 a cup for topping.

To Do:

1. Lightly whisk egg yolk with sugar.
2. Add in corn oil and milk, stir to combine.
3. Add in cake flour, mix well and set aside.
4. In a clean mixing bowl, add in egg white, add in lemon juice, beat ill foamy.
5. Gradually add in sugar, beat till stiff peaks ~(hand mixer speed 3 takes about 5 minutes)
6. Take 1/3 portion of egg white mixture and use hand whisk to mix with egg yolk mixture till light.
7. Fold the balance of egg white mixture into egg yolk mixture combine well.
8. Pour batter into the pan (do not lined the baking pan, do not use a non-stick pan)
9. Bake in a preheated oven at 140C for 25 minutes (at lower rack) then increase to 170C and continue to bake for 30 minutes.

Frosting:

350ml uht whipping cream (i use nestle uht whipping cream)
35g icing sugar 

To Do:
In a stand mixer, pour cold uht whipping cream into the mixing bowl add in icing sugar and whip till it is stiff peak. (do not over whip) set  aside in the fridge.

To assemble the cake:
1. When the sponge cake is cool, slice it into 3 layers.
2. Put the first layer of sponge onto the cake board. Apply adequate amount of whipped cream onto the cake and arrange slice mango on top.
3. Apply second layer of cake onto the first frosted layer. Again apply adequate amount of whipped cream onto the cake and arrange slice mango on top.
4. Apply the last piece of cake onto the top. Apply the balance of the whipped cream onto the whole cake and smooth it out with a spatula knife. Then decorate with piped whipped cream and top with cube mango.. Done!! :D

Simple decoration with fresh cut mango cubes.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
