My mum's Mother's Day cake ;D

This year my mum is in Taiwan on Mother's Day so we celebrate a belated Mother's Day...^^ when she is back. My mum make a special request from me. She requested a Fruits Cake for her Mother's Day cake. This is the cake I made for my mum. Instead of hazel nuts I add in almonds. I love the smell of almonds when you bake it. Hmmm.... its so so... awesome. This is a more simple version Fruits Cake. If you love Fruits Cake you must try this. Ingredients: 120g raisins 60g dried black currants 60g dried apricots 60g dried pineapple 40g dried green grapes 40g dried plums 80g hazelnuts and mixed peel 30g glace cherries 60ml rum 120g butter 120g soft brown sugar 2 eggs 120g plain flour 1/4 tsp baking powder 1/4 tsp cinnamon powder 1/4 tsp ground nutmeg 30ml rum **I use brandy instead of rum in my Fruits Cake. **you can use any combination of fruits as long as it is 500g, eg I am using packed mixed fruits. Hubby's Birthday

My dear hubby's and Shawn's birthday falls on April. My hubby loves this New York Cheese Cake since having it once in Secret Recipe. My distributor HW brought us there when he is back from Singapore. This is New York CheeseCake before I decorate it. I made this cheesecake specially for Simon ~my hubby~ for his birthday. NEW YORK CHEESE CAKE I ngredients for the base crust: 24 pieces of oreo biscuits~crushed into crumbs 3 tbsp brown sugar 100g/3 tbsp butter ~melted Method: Mix all the base ingredients together and press into the base of a 23' loose bottom baking tray. Set aside. Ingredients for the cheese cake filling: 1100g Philadephia cream cheese~ soften 1 cup castor sugar 3 tbsp plain flour 1 tbsp vanilla essence 1 cup sour cream 4 eggs Method: 1) Beat the cream cheese until it is smooth. White and Dark Chocolate Mousse Cake for Shawn and Boey's birthday

Shawn's birthday falls on April like his daddy's birthday. He is looking forward to have a dinner with all his uncle and aunty friends. Firstly, he will celebrate in his tadika with his school mates and classmates. This cake I made for him is his second part of his birthday celebration. This is a White and Dark Chocolate Mousse Cake. This is also another white and dark chocolate mousse cake that I make for Boey, Shawn's cousin jie jie. Only this one decoration is a bit different...^^ Side view of this cake is simple only. Ingredients for the Chocolate sponge cake: 125g sponge mix 1 tbsp cocoa powder 30gm milk 45gm melted butter 3 eggs To do: 1) Beat sponge mix, cocoa powder and eggs for 2 minutes. Pour in the milk and beat for another 7-8 minutes or until the mixture is double volume. Fold in the melted butter. 2) Pour into a 23cm baking tray. Bake at 175c for 20 minutes. 3) After the sponge cake is cool, slice it into 2 pieces. Set aside. Ingredients for dark chocolate mo
