I am supposed to post and link this to Bake Along but something turn up the day before the link code close. My hubby twisted his ankle, it swollen so big and and i was so panic till i totally forgotten about almost everything. Thank God his ankle is recovery now.
Back to this Devil's Food Cupcake. this is definitely a keeper. The cake is moist, chocolaty and i love the fine crumbs. The frosting pairs so well with the cupcake. I don't have sour cream on hand, i substitute with Greek plain yogurt instead. The result is still very good!!

惡魔蛋糕是和天使蛋糕相对的。
兩種蛋糕類型是非常不同,惡魔蛋糕除了用巧克力外,並且用較少的蛋。
天使蛋糕就用较多的蛋,但是只是蛋白。

Recipe (from the book Bon Appetit)
makes 6 large cupcakes
Ingredients
1./4 cup natural unsweetened cocoa powder
1 oz high quality milk chocolate (such as Lindt) chopped
1/4 cup boiling water
1/4 cup buttermilk (i used 1/4 cup milk add 1 tsp lemon juice and let it sit for 5 minutes)
65g cake flour
1/2 tsp baking soda
1/4 tsp salt
1/3 cup dark brown sugar
1/4 cup canola oil
1/4 cup sugar (i used 1/8 cup)
1 large egg
1/2 tsp vanilla extract (i omitted)
To Do:
1. Preheat oven to 177C and line muffin cup with paper liners. (i use ready use paper cupcases) Combine cocoa powder and milk chocolate together and pour boiling water over it and whisk until it is smooth. Then whisk in buttermilk.
2. In a separate bowl, mix cake flour, baking soda, salt together. Set aside. With a electric mixer beat brown sugar, oil, sugar, egg and vanilla until light and creamy. Beat in flour mixture, alternating with chocolate mixture in additions. Scoop batter evenly among paper liners. Bake for 18 minutes or until skewer comes out clean.Let cupcakes cool in pan and then transfer to wire rack to let cool completely before frosting it.
Frosting:
2 oz bittersweet or semisweet chocolate (do not excess 61% cacao) chopped
1 oz milk chocolate chopped
1 Tbsp whipped cream (i use thickend cream)
1 Tbsp/15gm butter
1/4 cup sour cream (i use greek plain yogurt)
1/2 tsp vanilla extract
1/8 cup icing sugar (i skipped cause i run out of icing sugar ..lol..like this i do find the sweetness suits my family and it is just nice)
To Do:
Stir both chocolate, cream and butter in a medium bowl over simmering water until melted and smooth. (i zap it in mircowave oven at HIGH power level for 40 seconds) Remove from water and whisk in sour cream and vanilla, then icing sugar. Let stand until thick to spread or put in the fridge to speed up the process.(i filling the frosting into a pipping bag and chill it in the fridge for 5 minutes before pipping it onto the cupcakes.
