Before that i am going to share a birthday cake that i made for a friend's mil last few weeks. It is a 13 x 9 inches birthday cake. Inside is sponge cake; a piece chocolate and a  piece vanilla sponge cake with mixed fruits whipped cream sandwich in between. The cake is iced with non dairy whipped cream (Value pride topping) and decorated with fondant. Her mil is 80+ she wants something auspicious and a symbolize longevity.
先分享我的小作品吧!!在好几个星期前,做了这个蛋糕给位朋友为她家婆做寿。蛋糕是海绵体;一片是香草口味另一片是巧克力,夹心是杂果鲜奶油。外面的装饰和挤花是用鲜奶油 -Value pride topping。她的家婆以80几岁,她要好意头的,长寿的,就给她做个寿星婆和寿桃跟她家婆祝贺。

I suggest her a Goddess of Longevity (Shou Xing Po) to sit on the cake with lots of longevity peaches around her. Then write a Chinese character 'Shou:寿' on the cake; '寿‘ which mean longevity. It is like writing Happy Birthday or Happy Long Life..lol  It will be funny if it is to write Happy Long Life on the cake so the proper way is to write a '寿‘ on the cake. Use a skewer or toothpick to draw the 'shou' word on the iced cake then piped the cream on.
用牙签把‘寿‘字在抹好鲜奶油的蛋糕上画出;再装上星型花嘴的挤花代,跟着花好的线把鲜奶油挤上。

The Goddess of Longevity is made from fondant, The frosting, the 'Shou:寿‘word, the longevity peaches and leaves all are decorated with non dairy whipped cream.  
I use a Wilton piping tips; 
Round decorating tip 1A (here) for the peaches,
Leaf 69 (here) for the leaves and 
Open Star 17 (here) for ;Shou:寿“ and around the side of the cake.
As for the food gel paste coloring i use AmeriColor soft gel paste - soft pink (here) for the peaches, the '寿‘ word and side of the cake. Electric green gel paste (here) for the leaves.

The whole cake is simply and nice!!

Vanilla/chocolate sponge cake sheet

Recipe adapted from YUM YUM Magazine Volume 71 by 林锈美老师 (my slight adjustment in purple)
Make 1 piece 13 x 9 inches rectangle sheet cake (you can cut this cake to any shape according to your liking)

Ingredients:
5 eggs (i used grade A egg about 77 grams with shell)
80 grams castor sugar
20 grams cake emulsifier (i used ovalette)
30 grams milk or water
100 grams plain flour
20 grams cocoa powder (if you are making vanilla just switch this 20 grams to plain flour)
70 grams melted butter or canola oil for a healthier version (i used 50 grams)
1 teaspoon vanilla paste (this is for vanilla sponge)

To Do:

  1. Lined a 13x9 inches thin baking tin with parchment paper. Preheated oven at 180C. (i preheated mine to 170C as i found that at 180C my cake it a bit dry)
  2. Add eggs, castor sugar, cake emulsifier and milk into mixing bowl, whisk until the batter thicken. Ribbon like stage.
  3. Slowly fold in plain flour and cocoa powder and mix well. Add melted butter and stir well. (For me i add eggs, castor sugar, cake emulsifier, milk and flour (cocoa powder if using) into the mixing bowl and whisk with a balloon beater (KA) at speed 1 for 1 minutes. Scrape down the sides and turn to speed 5 for 6-7 minutes or until it is thicken. Turn to speed 1, slowly pour melted butter from the side of the mixing bowl and mixed well.)
  4. Pour batter into prepared baking tin, spread evenly. Bake for 18-20 minutes.
  5. Remove and leave to cool. 
**Different ovens set to the same temperature can vary a little or more. Please adjust baking time and temperature according to your oven =)


For decorating cake:
500 grams non dairy whip cream
1 can Dole mix fruit (drain away the syrup)

Assemble the cake:

  1. Place a piece of the cake sheet onto the prepared cake board.
  2. Apply a generous dollop of whipped non dairy whip cream on, spread evenly with a spatula.
  3. Sprinkle the mix fruit all over the cake.
  4. Place the other piece of the cake sheet on.
  5. Apply another generous dollop of whipped cream on top. Spread to cover the whole cake smoothly. (as smooth as possible )
  6. With a open star tip attached to the pipping bag piped the side of the cake with pink starr.
  7. Draw the 'shou:寿‘ word on the top of the iced cake. Piped with pink star.
  8. With the plain round tip attached to the pippin bag piped the longevity peaches onto the iced cake. 
  9. Lastly but not least add on the fondant Goddess of Longevity.
  10. DONE!

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus.
