Remember the potato buns i shared in my blog last month? That recipe was from Alan Ooi - the handsome baker that Zoe admire :p :p :p Today i am going to share another potato buns recipe by Agnes Chang. Some blogger friends ask me which one do i prefer, i would say depends on individual preference. My boys love both and i like Agnes's more, I did not shape it into a round buns or hot cross buns with custard topping but instead, i made them into LION!! YES, YES, YES into some CUTE LION ^_^

Tell me which one do you like??
My second tell me the pork floss lion looks older then the chicken floss lion. I can see the pork floss has darker shade and the chicken floss has lighter shade maybe its because of the dark and light shade that make the lion looks older (daddy lion) and younger (baby lion) My second said he want to eat the baby lion and the daddy lion is for his daddy ...LOL
Potota Buns
Method: Straight dough
recipe adapted from the book of 'I Can Bake' by Agnes Chang and xiao homemade (for chinese recipe)
For bread dough:
Ingredients A:
350g high protin flour / bread flour
1/2 tsp salt
2 Tbsp milk powder
1 tsp instant yeast (The book written 1Tbsp instant yeast, I guess there maybe a typo error, i used 1 tsp)
70g castor sugar
150ml boiled potato, peeled and mashed
1 egg (grade B about 50gm)
80ml water (used the water that boiled the potato, if it is not enough just add some water to top it up to 80ml)
Ingredients B:
75g butter (i used 60g)
Filling - here (i used the same filling as i used for my potato cheese and ham pie)
Ingredients for decorating the buns into a lion buns:
Some mayonaise (i used kewpie original mayonnaise)
Some pork or chicken meat floss
some cooking chocolate - melted, filled it into a pipping bag or a chocolate dispenser

The above is the chocolate dispenser. Hehe! i call it a chocolate dispenser pen.
To Do:
1. Add ingredients A into a mixing bowl, mixed and knead into a rough dough.
2. Add ingredient B - butter, knead into a smooth and elastic dough.
3. Rolled the dough into a round dough and let it rise for 1 hour or into double its size. (Put the dough into a oiled bowl and cover with cling wrap)
4. When the dough is ready, punch it down to expel air. Divide into 50g x 10 and 25g x 10; roll them round, let them sit for 10 minutes.
5. i made these lion buns once before long ago. Please Here for the shaping and wrapping of the lion buns.
6. Let the shaped lion buns rise for 50 minutes or double its size.
7. Bake in a preheated oven at 195C for 18 minutes or until it is nicely brown.
8. Let the buns cool and pipped on cooking chocolate with a dispenser pen for the lion's eye, nose, mouth and whiskers.
9. Spread mayonnaise around bun and place meat floss all around it.
10. It DONE!!
