Banana Bread - Bill Granger (Bill's

This recipe Banana Bread from Bill Granger is a keeper. It is easy peasy to prepare and bake. The texture is soft and fine, more to dense but it is moist and so delicious to enjoy it with a cup of hot tea. The topping is a mixed of brown sugar, chopped almonds (i used almond nibs) and cinnamon powder, then its sprinkle onto the bread before sending to bake in the oven. This add extra flavour and  texture to this simple banana bread.

Fragrance and crunchy top which will makes you want to have another piece....:p
This is also a very good Christmas treat to give to friends, just wrap it up with a piece of pretty wrapper and a pretty bow :D

Ingredients for the banana bread

Banana Bread

Ingredients:

45 g light soft brown sugar
30 g almonds, chopped (i use almond nibs)
255 ml soured cream (i used 255 ml dairy whip cream and add in 1 Tbsp of lemon juice)
1 tsp bicarbonate of soda
100 g unsalted butter, melted
230 g castor sugar (i used 100 g)
2 medium egg, lightly beaten
250 g plain flour
1 tsp baking powder
1 tsp ground cinnamon
250 g mashed ripe bananas, (about 2 medium bananas) (mine is small bananas, i used about 5 small ones)

To Do:

1) Preheat the oven to 180C/ gas 4. Grease and line two 10 x 18cm loaf tins with baking paper.
2) In a bowl, mix together the brown sugar and almonds and set aside.
3) In a large mixing bowl, mix together the soured cream and bicarbonate of soda, leave to stand for 5 minutes, then stir in the melted butter, castor sugar and eggs. (Sift the flour, baking powder and cinnamon into other bowl.) Gradually fold into the soured cream mixture, followed by the mashed bananas.
4) Divide the mixture equally between the prepared tins and sprinkle the brown sugar mixture on top. ( i sprinkle only half of the portion of brown sugar and almond nibs) Bake for 1 - 1¼ hours or until a skewer inserted into the centre of each loaf comes out clean. Set aside to cool in the tins for about 20 minutes, then turn out onto a wire rack to cool completely.

Shark Fin Dumpling ~

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! My fil (father in law) loves butter cake very much.  He loves the butter aroma and  he said its filling and not like cotton soft cake has no texture like butter cake and it is too soft and too spongy :p :p It has got a almost flat top :D The side are nice straight and flat.
