Ebi Fry (Fried Shrimp) エビフライ (日式炸虾) - AFF Japan

Today my kids are very excited when my hubby's classmate gave us 1 kg of large prawn. They request mummy to cook their favourite deep fried prawn (the chinese style) but i told them i am going to do the Japanese style...  EBI FRY  for dinner  :D

宝贝们今天特兴奋, 老公的同学送了我们1公斤的大虾. 宝贝就要求妈妈煮炸虾(中式的), 不过我告诉宝贝们今天妈妈要煮日式炸虾, 当晚餐 ^_^

This is dish that my kids will definitely order when we go to a Japanese restaurant. Other then this they will request for another dish that is Ebi Tempura.
I always wonder how do they cook the prawn so very straight. Again with Nami's step by step tutorial i know how to cook a very straight Ebi Fry at home ^_^

常常在想怎么能把虾炸的直直的..看了Nami的 食谱就明白了!!!



Ebi Fry (Fried Shrimp) エビフライ 
recipe source, adapted from Just One Cookbook

Ingredients:
  • Large prawns (I used 10 prawns)
  • Salt
  • Freshly ground black pepper
  • 1/2 cup all-purpose flour
  • 3 eggs
  • 2 cups Panko
  • Oil for deep frying

To do:
  1. Ebi fry’s prawns are very straight. (i learn from Nami how to make the prawn very straight but mine is still a little curve when fried )
  2. Season the prawn with salt and pepper.
  3. Dredge the prawns with flour, and then beaten egg (I follow Nami did not dilute the egg mixture, but you can do so with 1 Tbsp of water or milk). Next usually go to Panko, but for Ebi Fry, you double dredge with flour and egg. So after the egg, you go back to flour, then egg, and finally panko. Shake off the excess.
  4. Heat the oil to 350F (180C) degree
  5. Gently put 2-3 prawns in oil and deep fry them for about 2.5 minutes, or until golden brown. Transfer Ebi Fry onto a wire rack or paper towel-lined tray to remove excess oil.
  6. Between batches, make sure to scoop up the bread crumbs to keep the oil clean and avoid the oil turning dark.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
