Ina Garten is new to me. I only knew her when i wanted to join the blog hop event Cook like a Star organised by Zoe, Bake for happy kids.
I get to know her Ina Garten) more after i went browsing thru her website and found that her recipes is really simple yet delicious. This is one of the simple yet delicious recipe that i found...Thanks to Zoe..^^
These lemon bars tasted great. Even my boys like it too. But my second one wanted the lemon bars that is cut out from the side of the baking tray..I wonder why?? I asked him..he told me that the side ones have more crust...lol
I see..so I think the next time i make these Lemon Bars again..may be i will make thicker crust and half the lemon filling..:p
To be honest, I love the crust too..it is so nice and melt in the mouth..and of course eating with the lemon filling will be even more delicious.
Lemon Bars
Recipe is adapted from (The Barefoot Contessa Cookbook) or refer to this site www.foodnetwork.com
Ingredients For the crust:
1/2 pound unsalted butter, at room temperature
1/2 cup granulated sugar
2 cups flour
1/8 teaspoon kosher salt
For the filling:
6 extra-large eggs at room temperature
3 cups granulated sugar (I used 2 1/4 cups)
2 tablespoons grated lemon zest (4 to 6 lemons)
1 cup freshly squeezed lemon juice
1 cup flour Confectioners' sugar, for dusting
To do:
1) Preheat the oven to 350 degrees F. ( for my oven i used 180c)
2) For the crust, cream the butter and sugar until light in the bowl of an electric mixer fitted with the paddle attachment.
3) Combine the flour and salt and, with the mixer on low, add to the butter until just mixed.
4) Dump the dough onto a well-floured board and gather into a ball.
5) Flatten the dough with floured hands and press it into a 9 by 13 by 2-inch baking sheet, building up a 1/2-inch edge on all sides. Chill.
6) Bake the crust for 15 to 20 minutes, until very lightly browned. Let cool on a wire rack. Leave the oven on.
7) For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour.
8) Pour over the crust and bake for 30 to 35 minutes, until the filling is set.
9) Let cool to room temperature. Cut into triangles and dust with confectioners' sugar.

~The supermarket lemons are huge .. I could squeeze a cup of lemon juice with just 3 lemons..we seldom see such a big lemon here(my home town Miri)~
