Tea time ~ 17.. Bamboo charcoal bread loaf ~ 竹炭面包

竹炭粉,在市场上现在非常流行. 到处的面包店都有卖竹炭面包和蛋糕. 起初看了这面包感到有点怪怪的, 那么黑可以吃吗? 心又有不甘, 很想试试看是什么味道.....
以是, 就托了我二妹帮我买了竹炭粉. 哎哟!!! 真的好黑...不过很兴奋, 就可以试看这竹炭粉有什么特别....^^
Bamboo charcoal powder...I don't know when it is so trendy in baking. In every bakery shop you can see bamboo charcoal powder breads or products. First glance at this powder, I am curious, I mean can this be taken??? Because of curiousity I ask Shelly to buy a packet of a 50gms BAMBOO CHARCOAL POWDER home for me to clear my doubts....:p


                          
             ~ Bamboo Charcoal powder...50gms rm14.50 (price that I bought) ~

Basic Sweet Bread ingredients:
A 100g bread flour
     70g boiling water

B 300g bread flour
   100g plain flour
     80g sugar
       6g salt
      20g milk powder
1 tsp bamboo charcoal powder
        9g instant yeast

C 175g cold water
     60g cold egg

D 60g butter

E some cheddar cheese ~ cut into cubes

To Do:
1) Add boiling water from A into flour and mix well. Blend to form into a dough. Cover set aside to cool. Keep it into fridge for 12 hours.
2) Mix B until well blended. Add in C to and knead to form rough dough. Add in A and knead until well-blended.
3) Add in D and knead to form elastic dough.
4) Let it proof for 40 minutes.
5) Divide the dough into 3 parts of 300g eaches.

 (When rolling the dough sprinkle the cube cheddar cheese on the rolled dough)
6) Let it rest for 10 minutes, then follow the above site method.
7) Place in a greased loaf pan 20.5cm x 11.5cm x 7cm
8) Makes into 3 loaves. Let it proof for 55 minutes.
9) Bake at 180c for 24 minutes.

**If you are using Noxxa Breadmaker machine you can:
1) Add water, sugar, salt and the A dough then add in flour.
2) Put butter in the four corner then dig a curve in the middle of the flour and put in the yeast.
3) Use mode 11 or mixing and kneading mode.
4) When the cycle is complete then follow on (5) as above.

                         ~ The Switch Up Bamboo charcoal bread loaf ~

This is the Green Tea sponge cake and bamboo bread loaf version. It is the twist between green tea and bamboo charcoal. My Sam loves this very much.
Ingredients for sponge cake:
5 eggs
80g castor sugar
20g cake emulsifier
30g fresh milk
100g plain flour
20g green tea powder
70g melted butter

To do:
1) Put eggs, sugar, cake emulsifier and milk in a mixing bowl, whisk until batter is thickened.
2) Slowly add in flour and green tea powder and mix well. Add melted butter and blend well. ( a higher loaf pan (height 12cm) or a sandwich loaf tin is required for this switch up)
3) Pour half of the batter on top of risen bread loaf. ( this batter can make 2 loaf)
4) Bake in a preheated oven for 175c for 32minutes.

**I like to share after I have tried this out. I like the cheddar and bamboo charcoal bread, it taste lovely with the savoury taste of the cheddar cheese. As for the green tea and bamboo charcoal, it is the softness of cake with green tea and the spongy texture of the bread make it simply delicious...of course, must go with a cup of coffee.... ^^

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
