My birthday cake ~Chilled Pineapple CheeseCake...^^ 黄梨乳酪蛋糕

六月是我许多朋友的生日月份, 我也在内. 好开心, 今年有好fb的朋友们祝我生日快乐,好好感动噢....^o^
在这里就想请所有祝我生日快乐的fb朋友们吃我的生日蛋糕.

~ Chilled PineappleCheeseCake~

This is a chilled cheesecake. I used biscuits crumbs for the base, swiss rolls slices for the side, filling is cream cheese with pineapple the taste is just delicious.....

Base ingredeints:
200gm sweet biscuits ~I use kraft tiger biskuat
crushed biscuits finely
100gm melted butter
2 tbsp brown sugar
60gm toasted almond flakes

To do:
1) Mix biscuits, brown sugar, almond flakes together and pour melted butter to mix well.
2) Press this prepare biscuits mixture into a 8' loose bottom round mould.
3) Put into refrigerator while you prepare the cheese filling.


Cheese filling ingredients:
320gm canned pineapple~drained and crushed
2 1/2 tbsp gelatine powder,dissolve in 120ml pineapple syrup
250ml milk
5 egg yolks mix with 80gm icing sugar
1/2 tsp vanilla essence
400ml thickened cream
1 tbsp icing sugar
250gm cream cheese
100ml water

To do:
1) Combine crushed pineapple and gelatine. Set aside.
2) Bring milk to boil over medium heat. Remove from heat. Meanwhile whisk egg yolks until foamy. Gradually stir in hot millk. Stir mixture over simmering water until smooth and thick. Remove from heat and stir in vanilla flavouring. Leave to cool in cold water bath.
3)Whisk cream and icing sugar until soft peak form. Beat cream cheese until smooth and fold in the whisked cream. Add in gelatine and pineapple mixture and mix well. (if you find that the gelatine does not dissolve completely before mix in, do put the gelatine mix to double boil to dissolve well)
4) Lastly stir in the egg yolks mixture.
5) Arrange slices of swiss roll onto the sides of the mould and spoon the cheese filing into the mould carefully.
6) After pouring in all the cheese filling arrange the swiss roll slices on top. Cover and chilled the cake in fridge for 6 hours or overnight.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
