TeA Time ~ 15 ... Banana Muffin ~香焦满福

My father-in-law is a green finger. Whatever he plant will bloom and blossom. Recently his banana tree bare lots of bananas. Once it is ripe, we have to finish it or it will become rotten. It is time to make something with these bananas. I make Banana Muffin, it simple and delicious.

                                ~my little banana muffins~

                              ~I like the crispy top of these muffins~
This yield: 6 small size cups (top 5.5cm and bottom 4cm cupcake case)
1 medium size banana ~ peel and mashed
1 egg
1/4 cup canola oil
1/4 cup castor sugar~I reduce a bit of the sugar if the banana is sweet 
1/2 cup self raising flour
1/4 tsp vanilla essence ~ optional
1/2 tsp salt
some papercups or muffin cups ~ About 8 pieces for small size ones
(I use nescafe papercups ...)

To Do:
1) Preheated oven at 170c.  Whisk egg, castor sugar and canola oil for 3 minutes. Until it is pale and foamy.
2) Fold in mashed banana and flour. Do as few stroke as possible. Blend just to combine.
3) Spoon the muffin batter into prepared papercups, fill up 3/4 of the paper cups.
4) Bake them for 15-20 minutes.

                 ~soft and filling inside...look...real banana in this muffin~
