Tea time 14~Zerba Tea Cake ~ 斑马牛油蛋糕

Butter cake I believe have been around for ages. A lot of you including myself loves butter cake. This is a different butter cake with cooking chocolate. It is a recipe from a book named "my favourite DANITY DESSERTS~辛福下午茶点". A book from Chef and Food Stylist: Kevin Chai 蔡高晉老师.



                                                 ~Zerba Tea Cake ~
Ingredients:
170g butter
150g castor sugar
3 eggs
170g plain flour
1/4 tsp baking powder
40g chocolate~I use Hershey unsweetend baking chocolate
40ml fresh milk
1/8 tsp bicarbonate soda

To do:
1) Preheated oven to 180c; greased and lined
I don't have a 18cmx25cm tray so I use a 8"x8" tray
2) Melt chocolate with fresh milk over low heat. Remove, stir in soda, leave aside.
3) Beat butter and sugar until light and fluffy. Add ineggs, one at a time, beating well after each addition.
4) Fold in sifted flour and baking powder until  forms batter.
5) Divide into two portions. Add melted chocolate in one portion. The other reserve for original flavor.
6) Spoon batter into pipping bag seperately. Then pipe into pan alternately.
7) Bake in oven for 30 minutes or until cooked.

I like the mixed of chocolatey and butter taste of this cake. Texture of this cake also really nice it is soft and satiny. Simply nice.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
