Kek Lapis Kopi

I misses the Hari Raya goodies so so much. One of the best is Kek Lapis. You need to take a lot of time to grill this type of cake. Grilling it layer by layer. Normally, in Kek Lapis ingredient need a lot of egg yolks and sugar. This one is pretty good you do not need so much egg yolks.



CakE LaPis COffee

Ingredients:

10 egg yolks
6 egg whites
10 ozs butter
8 ozs castor sugar
7 ozs hong kong flour
2 tbsp ovalette
4 tbsp condense milk
1 tsp vanilla essence
2 ozs ice water
1 tbsp coffee granules ~ dilute in 1/2 tbsp of hot water
1 tsp coffee oil

Lined a 8' x 8' baking tray with greased paper.

Method:
1) Beat butter and condense milk until it is pale.

2) In another bowl beat eggs, sugar, hong kong flour, vanilla essence, ovalette and ice water all together until it is fluffy.

3) Mix in butter mixture and beat until well combine.

4) Divide into 2 equal portion.
i) 1 portion ~ plain
ii) 1 portion ~ add in coffee granules and coffee oil

5) Preheat the oven double grill function for 5 minutes.

6) Put in 5 tbsp of the plain batter in the baking tray and smooth out evenly. Use only top grill function of the oven and grill for 5 minutes.

7) Follow by 2nd layer that is the coffee layer. Put in 4 tbsp of the coffee batter, on top of the plain layer and smooth out again top grill for 5 minutes.

8) Repeat the steps until all of the batter are used up.

  4. Hi Joyce, thanks. I have added in the sugar amount..It is not difficult to make, only need time. This cake need about 2 hours to grill...^^

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
