It's March , gosh!! Time fly!! My kids are having term examination at the moment. When kids have their exam we as parents also having exam ... LOL
To boost up their energy i make some simple tea time treat for them. This is one of those easy and delicious treat for anytime of the day . Simple Honey Crepe, it is light but full of flavor with cream cheese topping and drizzle of HONEY!!

Zoe and i would have something to say. Yes! if you have visited Zoe you might have knew what i would like to say. Well, let's get to the point. It is sad to annouce that due to our personal commitments we have to end Little Thumbs Up event very soon. In the month of May will be our last event. Zoe and i would like to say THANK YOU to all who have been with us in hosting this Little Thumbs Up events and also a big THANK YOU again to all who have join us in baking and cooking along with us.

Simple Crepe with Honey and Cream Cheese ~简易蜂蜜芝士可丽饼
Recipe adapted from marthastewart.com
Makes 5 pieces (i make 1/2 of the recipe; below is my record of half the recipe)
Ingredients:
1/2 cup all purpose flour (spooned and leveled)
1/2 Tbsp castor sugar
1/8 tsp coarse salt
1/2 cup + 1/4 cup whole milk
2 large eggs
1+1/2 Tbsp unsalted butter, melted
To Do:
1) In a blender, add in milk, sugar, salt, flour, eggs and butter.
2) Puree until mixture is smooth and bubbles form on top, about 30 seconds. Let batter sit at least 15 minutes at room temperature or let it sit in the fridge in a airtight container, up to 1 day; whisk before using.
**I accidentally added the melted butter into the batter instead of using it to grease the non-stick skillet :p Luck me the crepe turn out well.
3) Heat a 12-inch non stick skillet over medium. Add 1/3 cup batter and swirl to completely cover bottom of skillet. Cook until underside of crepe is golden brown, about 2 to 3 minutes
4)Loosen edge of crepe with a rubber spatula then with your fingertips, quickly flip. Cook 1 minute more. Slide crepe out of skillet and repeat with remaining batter. (coat pan with butter as needed)
5) Fold crepe into triangle to place onto a serving plate and put onto honey and cream cheese topping. Drizzle with honey...'my youngest told me, 'Mum! i want more honey please!!!!"
For honey and cream cheese topping:
Ingredients:
50g cream cheese
1 Tbsp milk
1/2 Tbsp condensed milk (sweetness can be adjust to your own liking)
1/2 Tbsp honey
To Do:
Mix all the ingredients together into a smooth paste.
Put it into fridge to set, then it will be easier to scoop with a ice cream scoop to top on the crepe.
**Notes: using a blender ensures a smooth crepe batter that has the consistency of heavy cream.
