Old Fashion Kopi Tiam Bread Loaf 古早咖啡店面包

This is an old fashion kopi tiam (coffee shop) bread loaf.
It has coarse texture but it is so soft and nice! This coarse texture kind of bread bring back many child hood memories! We use to have this type of bread in the local coffee shop. They will take two pieces of bread, make into a kaya butter sandwich, ( a piece spread with butter and the other piece spread with Kaya.) "I spread with my Homemade Kaya  ^_^  " Before i go further....

Old Fashion Kopi Tiam sandwich bread with Kaya!
古早的咖啡店面包,口感和味道都很让我回味!记得小时在海南咖啡店都能吃到类式的面包。面包体虽然是比较粗但是很柔软吃上一两片也就非常有饱的满足感。切两片再抹上厚厚的homemade 咖哑非常好吃呢!

Old Fashion Kopi Tiam Bread Loaf  ~古早咖啡店面包
Recipe adapted from Skillful and Creative Treats by Chef Lim Siew Chung (巧思妙点)
Makes 1 loaf (pan size 21cm x 12cm x 11cm)

Ingredients:
500g bread flour
1 Tbsp full cream milk powder
2 Tbsp Honey
1 Tbsp brown sugar
1/2 tsp salt
2 tsp instant yeast
300-310ml water
40g butter, at room temperature

To Do:
** i am using Noxxa Breadmaker machine to mix, knead, and also to bake the bread.

1) Add all the above ingredients into the bread pan.

2) Select Mode 10 that is the dough function. (with this function the breadmaker machine will mix, knead and do the first dough proofing in the breadmaker machine. Takes about 1 hour and 30 minutes. If you do not have a bread machine, you can use a stand mixer or just with your hands. After mix and knead, roll the dough round, cover with a piece of damp cloth and let it do the first proofing until the dough have double its size or about 40-50 minutes)

3) Remove the dough from the bread pan. Punch down the dough to expel air. Divide dough into 4 equal portions, roll round the divided doughs and let it sit for 5 minutes.

4) Roll the the first dough flat with a rolling pin and roll up into a long log shape roll. Do the same to the rest of the dough.

5) Again roll the long log roll into long flat with a rolling pin, and roll up from the short end into a short log roll. Place into a greased loaf pan. You will have 4 rolls sitting side by side laying in the bread loaf pan.

6) Cover dough with damp towel and leave to proof in bread loaf pan until it rise about 1cm above the bread load pan.

7) Bake in a preheated oven at 200C for 45 minutes. Remove and unmould immediately and let it cool on wire rack.




This is the grill sandwich bread. It is simply tasty!!

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus.
