Bacon Cheddar Scones - Bake Along #81 (培根车打芝士司康饼)

This is a tasty savory scone. When i saw this in Joyce's blog i know i am going to bake it. Bacon, cheddar cheese and chives is what i love. When i run through the ingredients, i saw creme fraiche. Creme fraiche over here is quite expensive and buying a pack is too much. Thanks to Joyce for sharing a home made creme fraiche. Why not DIY you own creme fraiche.






Bacon Cheddar Scones
iAdapted from "Bouchon Bakery", Thomas Keller and Sebastien Rouxel) or here

Ingredients:
107 gm all purpose flour
196 gm cake flour
8.1 gm baking powder
1.6 gm baking soda 
27 gm granulated sugar
3.6 gm kosher salt
132 gm cold unsalted butter, cut into 1/4 inch pieces 
71 gm heavy cream, plus additional for brushing
89 gm creme fraiche
340gm Hobbs applewood smoked bacon, cooked, drained and cut into 1/8 inch pieces(77gm,cooked weight)
144 gm grated white cheddar cheese
36 gm grated white cheddar cheese (for sprinkling before baking)
10 gm minced chives
freshly ground black pepper

To Do:
Sift flour and baking powder in the mixer bowl and add in sugar and blend well. Turn on low speed to combine, add in butter and mix again till it is crumbly.

With mixer still running pour in heavy cream, creme fraiche and mix till dough just
comes together.Scrape down any bits that is stick to the side of the bowl. Add in bacon, grated cheese and minced chives and mixed till it is just combined.

Remove dough from bowl and put it between 2 sheet of plastic wrap. Roll and pat it into a rectangle about 7 by 9 inches block. 

Cut into 8 pieces. Place onto a lined baking pan. Spaced well apart as it will expand a little.

Brush the top with some heavy cream and sprinkle with grated cheese and black pepper. Bake in a preheated oven at 160C for 35 minutes or till it is golden brown.

**The original recipe required to freeze the scones before baking but i did not. I bake it straight away and i am happy it turn out well.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus.
