Good morning!! Are you interested to have a piece of Cinnamon Apple Almond Streusel Square for breakfast??
If you are craving for apple pie this is the simple version of apple pie that you wouldn't want to miss. It is so delicious!!
All you need to do is just prepare the base, press it into a square baking tray, put into the fridge while you prepare the streusel topping. Add on the topping onto the base and BAKE....DONE!! You can enjoy this apple squares with a cup of hot coffee or tea.
Cinnamon Apple Almond Streusel Squares
Recipe adapted from "Back to Baking" By Anna Olson with my modification in purple
Makes :1 8 inches square baking pan (mine cut into 16 squares of 1 inch by 1 inch square)
Base:
1/4 cup ground almonds (I use 1/4 cup almond flakes and chopped finely)
1/3 cup all purpose flour
1/4 cup icing sugar, sifted
1/2 cup cool unsalted butter, cut in pieces
Streusel
1 1/2 cup all purpose flour
1/3 cup packed light brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp baking powder
6 Tbsp unsalted butter, cut in pieces
1 1/2 cup peeled and coarsely grated tart apples,
such as Granny Smith or Mutsu (i used 1 Granny Smith and 1 NZ Rose apple)
Icing sugar, for dusting

To Do:
- Preheat the oven to 350F (175C) Line an 8 inch (20cm) square pan with parchment paper so that the paper hangs over the sides a little.
- Parchment paper over hang a little at the sides of the square baking pan
- For the base, stir the ground almonds, flour, and icing sugar together. Cut in the butter (by hand, using beaters, or in a food processor) until the mixture into a rough and crumbly texture. Press this into the prepared pan and chill it while preparing the streusel.
Cut the butter into cubes,
Cut the butter into the flour mixture to a rough crimbly texture.
Press the crumbly mixture into the prepare square pan.
I did not grated the apples but instead i cut it into small stick size, I love have a bit of texture when bitting into it.
The streusel topping.
- For the streusel, stir the flour, brown sugar, cinnamon, nutmeg and baking powder together. Cut in the butter by hand until the mixture in a rough and crumbly texture. Stir in the grated apple to coat it well. Gently press this onto the chilled base.
Gentlely press the streusel onto the chilled base.
After baked, cool it before cutting. I cut mine into 16 squares, each is about 1 inch by 1 inch square.
- Bake for 35 minutes, until just begin to turn golden. Cool completely before slicing, and dust with icing sugar to garnish. The squares can be stored in an airtight container for 3 days.

Yes, the addition of almond flakes makes it smell so good.
