Mango and Almond meal Friands .. 杏仁芒果Friands小蛋糕

It is mango season now.Everywhere here, you can see lots of mangoes hanging on the mango trees .. lol   

'Friand' is a new word to me. When i first saw this word in Ann's blog i thought it means friend but what does friend has to do with baking. Then i realise it is not friend but its friand. :D :D :D
The Friand (pronouced free-onds) is a small oval-shaped French cake often mistaken for a muffin which is not. It is baked in a special purpose oval tin called friand tin or barquette mould (shape like a boat mould) It is also appears to be related to financier, though sometimes the same mixture is baked in a rectangle tin for financier. Financier mean 'Gold Ingot' which the shape resembles. Both are popular in western cafes and comes with variety of flavours. You can have Mango and Pistachio Friands from Ann and Lemony Prunes from Cheah.

I don't have friand tins, i replace it with muffin tins. I am trying to search for the friand tins around the baking supplies in my place but unfortunately can't find any :(
This friands taste fabulous. Love the texture, it is moist and dense but it is soft. They cute and  prefect for a morning breakfast or a afternoon tea.

 My youngest polish 1 once the friands are out of the oven and he reserved another one for his afternoon tea  ;D

Mango and Almond Friands
Recipe source : adapted from Ann from Anncoo Journal with a little changes in purple

Ingredients: - makes 4-5

70g Almond meal
60g Icing sugar
30g Plain flour
105g Egg whites
95g Butter, melted, cooled
1-2 Mango, sliced



 To Do:
  • Preheat oven to 180C. Grease friand pan (I don't have friand pan, i use muffin pan) with butter or cooking spray. Add almond meal to icing sugar and flour into a mixing bowl.





  • Use a fork to whisk egg whites in a large bowl until frothy. Add butter and almond  mixture. Stir gently until just combined.




  • Fill prepared pans. Lay mango slices over batter and bake for 25-30 minutes or until firm. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely. Dust with icing sugar or snow powder. (i forgot to dust mind with icing sugar :p)

  5. Hi Mui Mui, oh yes 2 months ago I've tried the Lemon Friands using Ann's recipe. I too used muffin pan. Your Mango Friands look delicious ... with fruity mango slice, yummy!

  7. Yes, I have been eating lots of mangoes lately....but not in a way of using it to bake cakes or any desserts. I know this friands taste very yummy as it has almond meal in it.

    You know what??? I don't have a friand tin too :p Good that you have baked larger mango friands in muffin cups. Being so good, I guess only the larger ones can fully satisfy you :p

  21. hi doreen, i dont hv a friand pan too, i hv seen some bloggers using muffin tins too and it looks great ..just like yours..i think next time if i want to make friands, i just stick to muffin pan..i hv not seen a friand pan over at my place too

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Marble Butter Cake .. 云石奶油蛋糕 - Bake Along #59
