Home made Lemon Curd .. 自制柠檬凝乳

Hi everyone, hope that everyone are fine and well.
I am not very well since CNY because of bad flu and cough. The flu and cough that i had was on and off maybe due to leak of rest (",) and the weather here is really hot.  The bad coughing irritated me. I can't concentrate in whatever things that i am doing...sigh!!

Anyway, i am going to share this Home made lemon curd. This is a simple and delicious lemon curd. 

I love this smooth, sweet and tangy home made lemon curd. It is so good to spread on scones or bread roll or crackers or even better to use as lemon pie filling. 

It is so easy to prepared. All you need is lemons, sugar, eggs and some butter, then you will have a home made lemon curd in no time. I used mircowave oven to make my lemon curd.  


Home made lemon curd
recipe source: 孟老师的甜派与咸派(a chinese version of Meng Lao Shi (Teacher Meng's) Sweet Pie and Savoury Pie)

Ingredients:

145g whole eggs
145g castor sugar
135g lemon juice
zest of a lemon 
135g unsalted butter

To do:
1) Add eggs and sugar in a heat proof bowl. Double-boil it until it is warm and sugar have dissolved,  stir with a whisk. Add in lemon juice, keep stiring with the whisk. (i did not use double-boil method. I use mircowave oven to warm and cook it.)

2) Double-boiled the mixture until it is thicken. Turn of the stove, add in lemon zest and unsalted butter. Stir well and its done. 

3) Store it in a clean jar after it is cool.

  3. Thsnk you forsharing this recipe of lemond curd. I always love "Teacher Meng" recipes though Im illiterate in Chinese. Hope you are good and well by now and do drink lots of water or juices.

    Hope that you are feeling better... Cooking lemon curd is ok... No baking, please! Too heaty!!! - I'm like a grandma nagging... LOL!

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! Marble Butter Cake .. 云石奶油蛋糕 - Bake Along #59

My fil (father in law) loves butter cake very much.  He loves the butter aroma and  he said its filling and not like cotton soft cake has no texture like butter cake and it is too soft and too spongy :p :p  我家公爱吃奶油蛋糕. 他说奶油蛋糕香,有口感又吃的包. 不像海面蛋糕太柔软了,咬没东西. >< 糕 It has got a almost flat top :D The side are nice straight and flat.
