I am glad Vivian picked 'Oats' as her theme for LTU this month. Oats is healthy and it is a high fiber ingredient either for cooking or baking or just make as into beverage.
Thanks to Ann for the super additive cookie recipe ^_^
recipe source adapted from Ann's Cornflakes Cookies
Ingredients:
250 g Butter
175 g Icing sugar
1 Egg
1 tsp Vanilla powder
250 g Plain flour
100g Quaker instant oats
1 tsp Baking powder
160 g Nestle Coco Crunch (use hand lightly crushed so you can still feel the crisp of coco crunch after baked)
To Do:
Sieve and combine plain flour, oatmeal, baking powder and vanilla powder together with the crushed cornflakes / coco crunch and black currant, set aside.
Cream butter, egg and icing sugar together till white.
Pour in all the plain flour mixture to the butter mixture and mix them together at low speed (do not over beat) then mix well with a spatula.
Shape the cookie dough using a dessert spoon then using a small spatula to push the dough onto the baking sheet.
Bake at preheated oven 180 C for about 15 minutes. Then cool the cookies completely and store into an airtight container.
Just can't stop munching !!!
Two Thumbs Up for you mummy, more cookies please ...lol
