Hi, WAKE UP!! Hahaha!! I am in November now. Just cook this 'Braised Bean Curd' two days a go so i just post this here as a sharing ^_^ Why not as bean curd is such a nutrirional and healthy food.

My family love this dish, you can see this appear in our dinning table quite often. This is a quick to cook dish. It can be prepared in only 15-20 minutes if you have all the ingredients ready. I believe other then tofu you will have all the ingredients in your refrigerator and pantry.
There is leek, carrot, chicken, dried shiitake mushroom and of course soft tofu in this dish. It is really quite simple to cook this. First rub some sea salt onto the soft tofu. Cut the tofu into 4.
Pan-fry the tofu until it is golden brown. Frying the tofu will makes the tofu more flavourful and will no break into pieces when braising. Heat up some oil in a wok or skillet, add in slice ginger and chopped leek ( the white part) saute until it is fragrant. Add in slice shiitake mushroom, slice carrot, slice leek and stir fried for 1-2 minutes. Add in light soy sauce, stir to mix well, pour in chicken stock or water. Add in oyster sauce and let it boiled, turn the heat to low and simmer it for about 5-8 minutes or until the sauce have reduce a little and the carrot have soften. Add a little starch solution to thicken the sauce and it is ready to SERVE.
Sam and Seanan loves tofu very much but Shawn is a bit fussy. He will see how it is cooked to decide whether he likes it or not ><

Braised Tofu (红烧豆腐)
recipe source: Doreen /mui mui
Ingredients:
5 pieces soft tofu (i used homemade tofu)
100 g chicken breast meat, slice into thick strips. marinate
2 slices of ginger
3 leeks, cut a slit from top to bottom and rinse well under cold water. Chopped the white part and slice the pale green part diagonally in 1/4" thick
3 pc dried shiitake mushroom, washed then soaked in 150 ml water, keep the soaked water
1/2 carrot, peeled and sliced thinly (i uses a cookie cutter to cut out some star shape :p)
100 ml water
Seasoning:
1 tbsp light soy sauce
1 tbsp oyster sauce
salt
1 tsp corn starch
1 tbsp water
To do:
1. Cut the bean curd into 4 equal squares pieces. Soaked the mushroom until soften, squeeze out the excess water, save the soaking water. Marinate the chicken with 1 tsp of soy sauce. 1l4 tsp oil and 1/4 tsp of corn starch.
2. In a wok or skillet, heat up some oil until hot. Pan-fry the bean curd until golden brown. Dish up excess oil, leave only 3 tbsp of oil in the wok add in ginger, leek (white part only) and mushroom stir-fry until aroma.
3. Add in marinated chicken, fried until it turn white. Add in carrot, leek (green part) and bean curd pieces, briefly stir-fry then add in soy sauce, oyster sauce and salt to taste. Give it another quick stir, Add in soaking water and water, cover and simmer for 5-8 minutes. Mixed corn starch with 1 tbsp of water, turn up the heat, stir in the corn solution and cook until it is thickened. Serve this pipping hot with steamed rice.
