I am sharing a quick post here. The is a simple yet delicious non baked cheesecake. You can prepared it one or two days ahead. I make the cheesecake into individual cup. Why not?? Save your time from slicing and you can serve the cake to your guest in split seconds.

Yogurt Cheesecake (优格乳酪蛋糕)
Recipe adapted from The first Baking book for beginners by Carol Hu
makes 1 6 inches round cheesecake or 4 small cups (200 ml)
A. Ingrediets for Biscuit Base:
To do: Put all the biscuits into a zip lock bag and finely crush with a rolling pin. In a medium bowl mixed biscuit crumbs and melted butter together with hand. Pour the ready mixed biscuit base into the individual cups and press onto the bottom of the cups.
B. Ingredients for yogurt cream cheese filling:
Let it sit for a minute or two. Zap the bowl of milk in the mircowave for 10 seconds. Take out stir well. Make sure all the gelatine powder is dilute in the milk. If your milk is cold from the fridge, you might need to zap in the microwave a few more seconds. Set aside till milk is cool.
To do: Beat cream cheese and sugar in a large bowl with mixer until blended. Stir in plain yogurt and gelatine mixture. Gently fold in whipped cream, scoop into individual cups.
Refrigerate 6 hours or until firm. Garnish with fresh fruits before serve!

Get ready all the ingredients and the cups you want and start rolling!!
Pour the mixed biscuits base into the individual cups and press onto the bottom firmly. Chilled in the fridge while preparing the filling.
Beat cream cheese and sugar till creamy.
Add in yogurt. I love to use Greek yogurt from Nestle. It is creamy and it is unsweetened.
Fold in whipped cream, then it is ready to pour into the cups.
It is DONE!! Just chilled in the fridge until it is ready to serve. Add some fruits or it you don' t have enough fruits like me :p Just use rosemary sprig to garnish it :D

- 70g digestive cookies (I used Kraft brand Biskuat)
- 35g unsalted butter (melted)
To do: Put all the biscuits into a zip lock bag and finely crush with a rolling pin. In a medium bowl mixed biscuit crumbs and melted butter together with hand. Pour the ready mixed biscuit base into the individual cups and press onto the bottom of the cups.

- 100ml Diary whip cream
- 20g castor sugar
- 100g cream cheese (at room temperature or straight from the fridge, just zap in the mircowave oven for 10 second and cut into cubes)
- 25g castor sugar
- 100g Plain yogurt (i use nestle greek yogurt)
- 7g gelatine powder
- 50 ml fresh milk
Let it sit for a minute or two. Zap the bowl of milk in the mircowave for 10 seconds. Take out stir well. Make sure all the gelatine powder is dilute in the milk. If your milk is cold from the fridge, you might need to zap in the microwave a few more seconds. Set aside till milk is cool.
To do: Beat cream cheese and sugar in a large bowl with mixer until blended. Stir in plain yogurt and gelatine mixture. Gently fold in whipped cream, scoop into individual cups.
Refrigerate 6 hours or until firm. Garnish with fresh fruits before serve!

ReplyDeleteGreat idea to serve cheesecake in cups ^-^. In fact I was thinking to bake some light cheesecake in pudding mugs but my oreo cookies were gone before I could use them.
ReplyDeleteOoo yogurt in the filling sounds nice, cuts some of the richness of the cheese. My kids are super excited for Christmas too!

ReplyDeleteYum ! I've been eyeing that brand of Greek yogurt here but I find it a bit expensive , it cost HK $ 50. a pack , I think it cost as much as the one in Marks and Spencer :P
