I only knew Delia Smith after Zoe from Bake for happy kids told me 'In March Cook Like a Star is going to cook like Delia Smith and it is a great pick from Baby Sumo from Eat your heart out, who is one of the host for Cook Like a Star in March.
After browsing through Delia Smith online recipes, i have bookmark a lot of her recipes that i wanted to try. I choose to start from this simple Prawn Cocktail.

看了她的食谱网站, 我眼花缭乱这爱煮那个也爱煮..最后先来个凉拌菜吧, 也称为沙拉.
Base on Delia this is a recipe that is a part of her 1960s revival menu. In those days used to be something simple but luscious yet over the years it has suffered from some very poor adaptations, not least watery prawns and inferior sauces. So here, Delia Smith's recipe in all its former glory, is a starter quite definitely for the new millennium!
I made this into the simplest version :D i only dug out what i have from my refrigerator. I am doing a spring cleaning for my refrigerator ..heehee
I do feel that i am cheating here because i omitted a little ingredients here and there .. :p
It is indeed simple and flavourful. The sweetness of the prawn and the richness of the avocado are just luscious.

Prawn Cocktail

(I make half of this recipe and some of my modifications in blue)
Ingredients:
900 gms large prawns in their shell (i used frozen prawns)
1 crispy lettuce, such as Cos (i did not add this)
25 gms rocket leaves (i did not add this)
1 ripe but firm avocado
cayenne pepper (i did not add this)
1 whole lime, divide into 6 wedge sections ( i used lemon)
For the sauce:
1 quantity of Delia homemade mayonnaise ..here
Note: this recipe contains raw eggs
(i use store bought mayonnaise because my kids are having this with us)
a few drops of Tabasco (i did not add this)
2 tbsp tomato ketchup
1 dessert spoon lime juice (i used lemon juice)
To do:
- The very best version of this is made with prawns (either fresh or frozen in their shells) that you have cooked yourself. Failing that, buy the large cooked prawns in their shells, or if you can only get shelled prawns cut the amount to 1 lb (450 g). (i used frozen medium prawns)
- To prepare them: if frozen put them in a colander and allow to defrost thoroughly at room temperature for about 1 hour. After that, if using uncooked prawns, heat a large solid frying pan or wok and dry-fry the prawns for 4-5 minutes until the grey turns a vibrant pink. As soon as they're cool, reserve 6 in their shells for a garnish and peel the remainder.
- Then take a small sharp knife, make a cut along the back of each peeled prawn and remove any black thread. Place them in a bowl, cover with clingfilm and keep in the fridge until needed.
- To make the cocktail sauce, prepare the mayonnaise and add it to the rest of the sauce ingredients. Stir and taste to check the seasoning, then keep the sauce covered with clingfilm in the fridge until needed.
- When you are ready to serve, shred the lettuce and rocket fairly finely and divide them between 6 stemmed glasses, then peel and chop the avocado into small dice and scatter this in each glass amongst the lettuce. ( i did not add lettuce and rocket. i serve my cocktail in a small break prove ruffle bowls.
- Top with the prawns and the sauce, sprinkle a dusting of cayenne pepper on top and garnish with 1 section of lime and 1 unpeeled prawn per glass. (i did not add cayenne pepper and the lime wedge, i just make it simple for us and the kids)
