十二月是个非常喜乐的月份. 到处都挂满了圣诞的装饰. 颜色也是非常喜乐的色彩..红, 青, 白,金...^^  
'圣诞节' 是耶稣的诞生 ... 求主来了... 你准备好了吗??? 还没上道理班时都不知道'圣诞节'的意义是什么? 只知道又是一个假日, 可以休假, 可以和朋友出去玩玩.
但是... 上了道理班, 终于明白'圣诞节'的意义了...:)

今年来学着做'圣诞饼干'还加上蛋白糖霜...:D
做这饼干还带来蛮多乐趣, 也因为当天来了一位帮手SC...好开心..^^

~A plain star cookies~apply protein frosting (Royal icing)



~烤好的娃娃形饼...cookies is ready~



~饼干好了, 可以上糖霜了... cookies is ready to add on the frosting~

圣诞节快到了。。。。快做一些圣诞饼干来送送朋友吧 .. :)


圣诞饼干
材料:
A.饼干面团
200克 低筋面粉加1/2t 肉桂粉~过筛
50克 无盐奶油
40克 细砂糖
30克 蜂蜜
25克 全蛋液

B. 制作装饰蛋白糖霜
120克 纯糖粉
1/2粒 蛋白 (17克)
1/4t 柠檬汁
少许抹茶粉,无糖可可粉与
果酱各少许

做法:
1) 无盐奶油切小块,用打蛋器打散成乳霜状态.
2)  将细砂糖加入拌打至泛白, 拿起打蛋器尾端呈现角状.
3)  全蛋液分4-5次加入搅拌均匀.
4) 再加入蜂蜜也搅拌均匀.
5) 最后, 加入以过筛的粉类分两次加入, 使用手与盆低磨擦按压的方式混合成团状.(不要过度搅拌,     以免面粉起筋影响口感)
6) 把面团放入胶袋中, 再用擀面棍,擀成一张厚约0.3cm的面皮.
7) 放入冰箱,休息30-40分钟.
8) 把胶袋剪开, 再用沾了点分的饼干压模, 在面皮上压出饼干造型.
9) 把饼干取出, 一片片的排在烤盆中. 压剩下的面团,集合成一团压实.(不要搓揉, 用压实的方式集中起来, 才不会使面粉产生筋性影响口感) 剩下的面团重复步骤(6)之到所有面团用完.
10) 将饼干放入已经预热150c的烤箱中烘烤10-12分钟.
11) 烤好取出放在铁架上冷卻.

B. 制作装饰蛋白糖霜
1) 过筛糖粉, 备用. 
2) 将蛋白打至起一些泡沫, 然后加入柠檬汁和一半的糖粉搅拌均匀.
3) 继续将剩下的糖粉加入搅拌, 成浓稠的蛋白糖. (打蛋器尾呈现弯曲状, 盆子倒过来也不会流动的状态就完成了)
4) 各式颜色变化:
a, 绿色: 1/4t 抹茶粉 1T蛋白霜 冷开水少许
        b, 咖啡色: 1/4t 无盐可可粉 1T蛋白霜 冷开水少许
   c, 黄色: 1/4t 白香果酱 1T蛋白霜 冷开水少许
 d, 红色: 1/2t 盆子汁 1T蛋白霜 
 e, 白色: 1T 蛋白霜 冷开水少许
4)以上糖霜一一调和均匀, 由汤匙滴落下来成一直线的浓稠度即可.(蛋白霜没完成必需密封放冰箱保存, 放3-4天没问题, 若变得比较浓稠, 可以加少许水调整)
5) 在放以凉的饼干涂抹喜欢的糖霜.
6) 或用挤花袋画上自己喜欢的花样.
7) 利用彩色小糖石(或糖彩色珠)装饰.
8) 装饰完成放至糖霜干即可.

~用了冰淇淋杯再挤上青和白色糖霜, 再加上糖珠及星星做装饰 ...
I used the ice cream cone to make this Christmas tree and add in sparkle beads and star to decorate it~

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Marble Butter Cake .. 云石奶油蛋糕 - Bake Along #59
