Mid autumn festival is here. Other then making the snow skin(bing pi) mooncake this year I tried making pudding mooncake...^^ This ones are great and very yummy too.
A friend M give me 2 cute and yummy pudding mooncakes and that makes me start making this pudding mooncakes.
Mango bird's nest pudding mooncake
Ingredients for the bird's nest pudding:
Makes about 6 puddings
50g rock sugar
50g rock sugar
1/8 tsp salt
2 tsps agar-agar powder
2 pandan leaves knotted
300ml water
150ml bird's nest ( I uses progyms brand)
1/2tbsp corn flour
5-6 cups mould
Method:
1) Mix sugar, salt, agar-agar powder, pandan leaves with water and bring to boil. Cook over low heat and keep sitring with a hand whisk.
2) Once mixture boiled, add in bird's nest (mix with the corn flour before pour in). BOil again and quickly turn off heat once boiled. Pour mixutre into small moulds. Put aside to set.
Ingredients for the pudding Skin:
50g sugar
1/4tsp salt
2 1/2 tsp agar-agar powder
2 1/2 tsp agar-agar powder
2 pandan leaves knotted
400ml water
1/2 tbsp condense milk
400ml water
1/2 tbsp condense milk
50 ml whipping cream
1/2 tsp mango paste
Method:
1) Mix sugar, salt, agar-agar powder, pandan leaves and water bring to boil. Lower heat add in condense milk whipping cream and mango paste. Continue stiring with a hand whisk until bubble appear and turn off the heat.
2) Pour this agar-agar mixture into the pudding mould, filling half of the mould. Wait until it is half set put in the pudding filling from the above pic. **Do not wait until it is totally set.
This is the agar-agar skin part filling half of the mould.
3) This is the last layer of the pudding, that is after putting in the pudding filling and top with the last layer. I put a white for the last layer.
