Chocolate Orange Loaf Cake - Bake Along 3rd Anniversary...巧克力香橙蛋糕

Wait for me, wait for me but i was late >< Anyway, i have baked this cake specially for Bake Along #60 to celebrate the 3rd anniversary.

i have baked for the 1st, 2nd and now 3rd anniversary. Can you imagine that, three years have gone by and we are still baking along. Yeah, Yeah, Yeah!!


Tasted the first slice and can't stop having the second and third and forth and this is what is left for the celebration :p

 This is a delicious cake. It is a simple chocolate cake with orange scented. My boys love this cake, simply it is a chocolate cake. My boys are my super fan, what ever mummy cook or bake they love :p My eldest even told me 'Mum you are the best cook in the world' i mean for him i am but am i..lol

 
Some of the basic ingredients are butter, eggs, flour..
  and i call this - the special added ingredients are orange juice, muscovado sugar (i can't get this sugar here, i replace it with brown sugar) and golden syrup. The addition of the special ingredients make the cake sooo good. The cake is moist and texture is between a cake and almost like a fudgy brownie. Do you know what i mean :D oh!! nevermind what i mean, just bake this cake yourself your will know what i mean :D

Chocolate Orange Loaf Cake (巧克力香橙蛋糕)
recipe source: Nigella Lawson's book 'KITCHEN"

Ingredients:

150g soft unsalted butter plus some for greasing
dab flavourless vegetable oil, for greasing syrup spoon
2 x 15ml golden syrup
175g dark muscovado sugar (i replace with brown sugar)
150g plain flour
1/2 teaspoon bicarbonate of soda
25g best quality cocoa powder, sifted
2 eggs
zest of 2 oranges and juice of 1

1 x 900g (2lb) loaf tin

To Do;
  • Preheated the oven at 170C and lined your loaf tin wiht baking parchment or a paper loaf tin liner.
  • Beat the already soft butter with syrup - if you dab your spoon with a little oil on your tablespoon measure with a sheet of kitchen roll, the syrup shouldn't stick to the spoon - and the sugar until you have a fairly smooth caffe Americano cream, though the sugar will always have a grit about it.
  • Mix the flour, bicarbonate and cocoa powder together and beat into the syrup mixture. 1 tablespoon of these dry ingredients before beating in 1 egg. Then add another couple spoonful of the dry ingredients before beating in the second egg.
  • Carried on beating in the remaining dry ingredients and then add, still beating, the orange zest and finally gradually, the juice. At the stage, the batter may suddenly dimpled as if slightly curdled. No need to panic! 
  • Pour and scrape into the prepared tin and baked for 45 minutes. (i baked mine for 55) though check 5 minutes before and be prepared to keep it in the oven 5 minutes longer if need to be. A cake tester won't come out entirely clean, as the point of this cake, light though it may be, is to have just a hint of inner gunge. Leave to cool a little in its tin on a wire rack, then turn out with care and leave on the rack to cool.

I like mine with some cream cheese with milk mixture and tea in a polka dot tea cup :D

  4. Hi, Doreen. Such a lovely cake you have! May I know the steps:
    Beat butter and syrup;
    Add 1tbsp of flour mixture, follow by 1 egg;
    Add a couple spoon of flour and add the second egg;
    Add in the balance of flour mixture;
    Lastly, add orange zest and orange juice.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
