Chewy Korean Mochi Bread ... (QQ 韩式麻磁面包)

I have been wanted to bake this Korean mochi bread for quite sometimes but did not take any action until a friend of mine ask about it. She sent me a pack of this Korean mochi bread premix and ask me to try. Thanks to LK for sending me the pack of Korean mochi bread premix. This premix is not cheap, a pack of 550g cost rm12.50.

This is my first attempt for this Korean mochi bread. I am quite happy with the out come of this Korean Mochi Bread. I have 2 recipes with me when i wanted to try out, which i can't decided which to use. In the end i decided to use the smaller portion recipe. I was thinking if it doesn't turn out well, as least i did not waste too much ingredients :p The recipe i am using is from a fb friend, Pheony. She is a great baker. All her cakes, bread and cooks are so prefectly done.
My youngest wanted to give me photo a thumbs up but end up he is holding the Korean bread like holding a DINO EGG .. lols

Next thing he is up to is "mummy, can i eat this??"
**There is a few pieces of these Korean bread that look quite pale because of the heating element in my oven is not that even. That is why it is not browned that well :p

Would you like to have a Korean Mochi bread ?
**If these Korean bread are unbaked they will shrink or collapes on the top or side of the bread. Simply return them back to the oven as fast as possible and bake for another 5-8 minutes.

The inside of the Korean Mochi bread is almost hollow and it is soft and chewy, which we call it QQ.
Making these Korean Mochi bread is quite simple. Although it mention it is a bread but no yeast is added. Before trying it i was thinking it will be quite time consuming because it need to be proof but instead it is not. All it need was pre toast (without oil) the black sesame seeds, ahead and set aisde.

Pre toast the black sesame seeds without oil in a saute pan. 

Mixed and knead the ingredients into a dough.
Add all the ingredients including the Korean Mochi bread premix into a mixing bowl and mixed into a dough. Add in pre toasted black sesame seeds and continue mixed till combine.

Add in pre toasted black sesame seeds.
Let it rest 10 minutes,  covered. (i used KA on speed 1 and 2 with dough hook to mixed)
 
Dough is done, let it rest for 10 minutes. (The mixing cycle takes about 8-10minutes)
Then divided into small portions of small round balls and place on a lightly greased baking tray. Let it rest for another 10 minutes, then it is ready to send to the oven.
To make the crispy and crack crust for the Korean mochi bread, was to spray water onto the bread while baking.
Roll each portions into a 42grams small balls.
These are  the Korean Mochi bread !!

Chewy Korean Mochi bread
Recipe adapted from a fb friend - Pheony
I make 12 pieces from this recipe
Ingredients :
200g Korean Mochi bread premix
50g bread/high protein flour
5g milk powder (I replace this with Parmesan cheese)
90g whole egg
65g milk
50g corn oil
5g light soy sauce
30g black sesame seeds (dried toasted and let it cool)

To Do:
  • Pre fried the black sesame seeds without oil ahead. Set aisde to cool.
  • Preheat oven at 170C.
  • Add all the above ingredients into the mixing bowl. Mixed it into a dough. (i used my KA with dough hook to do the mixing and it took about 8 minutes)
  • Add in black sesame seeds and continue mixed to combine. Let the dough rest for 10 minutes, covered.
  • Divde the dough into small round balls about 40-42g per portion. Place in a greased baking tray and let it rest for another 10 minutes.  (the dough is quite sticky to handle. Just spread some cooking oil on your hands to roll)
  • Bake in a preheated oven at 170C for 5 minutes. After 5 minutes take out the baking tray, lightly spray some water onto the bread. Bake for another 5 minutes. Again take out the baking tray, lightly spray the bread again. Bake for another 5 minutes again.
  • Once the last 5 minutes is up, bake again for another 25-30 minutes then it is done :D
 This is Korean mochi bread is quite additive. It has crispy crust and chewy inside and its full of black sesame aroma.

  6. Hi Mui Mui, please make more to share with us. So cute and I believe it is very aromatic with the black sesame seeds. I can imagine the aroma as you chew on it. Korean food are getting popular here, will this be a hit too like their Kimchi?

  11. Hi Mui.. Your mocha buns look FAB!!! I did these too couple of weeks ago..but prob cos its premix? (just add premix, egg & milk) and texture wise not as good as what you have.:-p

  15. hi doreen, follow your recipe, not sure what when wrong. the dough is actually not sticky as you have mention but oily. after bake the crust is very hard. can you advise what went wrong? thanks!

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
