Giraffe Patch Bread and a meet up 长颈鹿面包和格友见面

This is a cute loaf of bread. It has giraffe patch on every slice of the bread. When i had a meet up with these three awesome baking buddies, we were talking about this giraffe patch bread. Sonia have baked and blog about this cute loaf of bread so May, Aunty Young and i decide to bake and post together.

There is a few version of  making this bread. I am using the bread dough i like to make this bread. It can be mix and knead in the bread maker or a stand mixer or even by hand if you like. I made 2 dough, 1 is plain and the other 1 is with cocoa powder. The dough is slightly more so i end up having extra 5 little plain bread buns.

It is good to spread with Nutella or eating just as it is; my second like it plain!
It is quite simple to assemble it, i follow the instruction from Sonia's blog.

This is ready to bake in the oven. It is kind of out of shape; yes, if it is not shape and arrange nicely, it will grow out of shape .. lol

Anywhere, i am happy with the outcome.At least the slices have Giraffe patch on and it taste really good.
Giraffe Patch Bread
recipe adapted from here
makes 1 450g loaf and 5@60 plain buns

The bread  (plain dough)
235 g bread flour
  15 g milk powder
    5 g instant yeast
  45 g sugar
    4 g salt
   50 g egg
 120 g milk

   30 g unsalted butter

To Do:
1. In a mixer bowl, add in all the ingredients excluded unsalted butter. In a stand mixer, attached the dough hook, mixed into a shinny and smooth dough. (medium speed)
2. Add butter, again knead into a shinny and smooth dough at medium speed. (i use KA mixer, took about 15-20 minutes)
3. Take out 230g, place into a clean oiled bowl to proof till double. 
**The balance plain dough is to mix with the cocoa dough balance to make into plain bread buns.

The bread  (cocoa dough)
235 g bread flour
  15 g cocoa powder
    5 g instant yeast
  45 g sugar
    4 g salt
   50 g egg
 120 g milk

   30 g unsalted butter

To Do:
1. In a mixer bowl, add in all the ingredients excluded unsalted butter. In a stand mixer, attached the dough hook, mixed into a shinny and smooth dough. (medium speed)
2. Add butter, again knead into a shinny and smooth dough at medium speed. (i use KA mixer, took about 15-20 minutes)
3. Take out 483g, place into a clean bowl to proof till dough. 
** The balance of the cocoa dough is to mix with the balance of the plain dough to make into plain bread buns.

To assemble the bread: 
(please refer to PIC 1, PIC 2, PIC 3)
1. Divide plain dough, 1 portion x  71g (large) and 3 portions x 53g (small) 
2. Divide cocoa dough, 1 portion x 138g (large) and 3 portions x 115g (small)
3. Using a rolling pin, roll the cocoa dough into flat and oval shape. Then roll back like a swiss roll.
4. Using a rolling pin, roll the plain dough into flat and oval shape and place the swiss roll cocoa dough onto the plain dough. Wrapped up the cocoa dough with plain dough and seal. Gently roll them into 24cm long log and repeat to the rest of the dough.
5. Divide each portion into two portions. First stack 3 small into the prepared loaf pan, follow by 2 large dough on top and top with 3 small dough. Set aside to proof for 35-40 minutes.
6. Bake in a pre-heated oven at 180C for 40 minutes. 
**i baked mine straight through end up the top of my bread is too dark. please adjust the baking time and temperature accordingly to your oven. In future i will tenth the top the bread to prevent it from further browning or too dark)
**for the plain buns, bake at 180C on middle rack for 15 minutes.
7. Once done, cool it on wire rack. Slice and serve!!

  13. Doreen , I was checking out this loaf online since last week , from Sonia's so.as some other blogs until I stumbled upon yours ! And I just can't help but laughed out loud after I saw the pic 3 , it seems the dough can't stop growing ! *still can't stop grinning * Sorry :D Anyway , the result still looks great !

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
