Yam bean Pumpkin Steam Buns 沙葛南瓜包子

Best recipe for everyone event is baking and cooking with pumpkin this July.

It is a post together time for BRFE today. We are sharing pumpkin 'Bao zi'. Literally mean pumpkin steam bun in Chinese. I choose to share my old recipe which I love very much. The skin of this 'Bao zi' recipe is soft and the texture of the boa zi is fine and a little bit chewy.

I was thinking of making some chicken char xiu bao zi (bbq chicken steam buns) for my boys to bring to school. When I dig in my freezer for chicken fillet ... Oops! chicken fillet is out of stock. No choice. I switch to make yam bean and mince meat bao zi. I have some yam bean and  2 packs of mince meat so this is the only ingredients for this simple pumpkin steam buns. Although it is simple but they are tasty :D




Yam bean Pumpkin Steam Buns
Recipe adapted from here  (revisit)
Makes 14 

Ingredients for steam bun skin:
A. (mixed just prior to using)
2 tsp instant yeast
100-120ml water (i use 110ml)

B. 
280g pau flour 
100g icing sugar
20g shortening (i use Crisco)
160g sweet potato - peel, steam and mash whist hot  (i use pumpkin - washed, peeled, cut into cube and put into a mircowave safe plate. Sprinkle some water onto the pumpkin and cover with a lit then mircowave on high for 5 minutes,)
1 tsp double action baking powder

 For skin:
  • Combine ingredients B in the big mixing bowl. Add in ingredients A, mix well invert onto a work top and knead with your palms for 2 minutes till dough is shinny and soft. Return the dough into the big mixing bowl (oiled it) cover with a piece of cloth, proof for 30 minutes. Divide into 48g each part. (i add all the ingredients in the bread maker pan and let the machine do all the mixing and kneading. I use dough mode which take about 20 minutes)
  • Flatten a piece of round dough, rolled the middle thicker then the sides. Scoop in a tablespoon of the filling and wrapped up like a bao zi. Arrange onto the steaming rack and steam with medium heat for 10 minutes.
Yam bean filling: 
Ingredients:
300g yam bean (peeled and cut into match strips 
200g mince meat (pork or chicken)
2 cloves garlic - finely chopped
3-4 pcs chinese mushroom, wash, soak and diced

1 tbsp light soy sauce
1/2 tsp dark soy sauce
1/4 tsp salt 
1/4 tsp chicken granules
dash of pepper
50,ml water, plus 1 tsp corn flour


To Do:
1. Heat up some oil in the wok. 
2. Add in chopped garlic, stir fry a while. Add in mince meat, stir fry till turn pale and no more pinkky color.
3. Add in yam bean, stir fry till it is slightly brown. Add in seasoning and mix well.
4. Taste to your liking. If you like it more to the salty side add a bit more light soy sauce and if you like it more to the sweet side add a bit of sugar.
5. Add in corn flour water, cook till it is slightly thicken.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
