Mango Pudding ~芒果布丁

Like the title of the book this recipe is from, this Mango Pudding is indeed an Exquisite piece of dessert. Though it is just a mango pudding but its texture and its flavor taste so good, i believe no one will say NO!

It is velvety and smooth with a slight firm jelly texture. If you shake the platter the pudding will jiggle like a soft tofu :D
Get ready some mango puree or you can use mango juice from bottle or box.

Mango Pudding
Makes about 13 cups (each cup is about 90-110ml)

Ingredients:
300 gm mango flesh 
1100 ml water
2 1/2 tsp agar agar powder
3 tsp gelatine powder
250 gm sugar (I used 185 gm)
250 gm evaporated milk
2 tbsp custard powder
1 tsp mango essence ( I omit this)
Few drop food colouring ( omit this too)

To Do:
1. Blend mango and water till fine then strain. ( I added only 500ml of water to blend the mango and strain then add in the balance of the water.
2. Combined agar-agar powder, gelatins powder, sugar and custard powder, add into the mango juice. Bring to boil over medium heat till sugar dissolved.
3. Stir in milk, essence (if use) and yellow colouring (if use) 
Pour mixture into mould, allow it to cool, then transfer to fridge for at least 4 hours to overnight.
4. Unmould it and serve with whipping cream. (Originally it is serve with evaporated milk but I find serving with whipping cream is so much creamier and lighter; I used nestle uht whipping cream)

可做大约 13 杯(每杯大约是90-110毫升)
材料:
300克 芒果肉(我用我家乡本地芒果)
1100毫升 水
2 1/2 茶匙 燕菜粉
3 茶匙 鱼胶粉
250克 糖 (我用185克,因为芒果本身特甜)
250克 淡奶
2汤匙 蛋黄粉
1 茶匙 芒果香精(我没加)
少许黄色素(我也没加)
做法:
1 把芒果肉加水以果汁机打烂,过滤。(我以500毫升水加芒果肉打烂过滤才加剩余的水;这样做较小的搅拌机比较好处理)
2 把燕菜粉,鱼胶粉,蛋黄粉,及糖混合后倒入芒果汁拌均匀,以中火煮至糖溶化及滚。离火。
3 加入淡奶拌均,即可倒入模杯中待凉,再放入冰箱待凝固。放入冰箱至少4小时或隔夜。
4 使用前可脱模,加上少许鲜奶油!好吃!(愿食谱是加上淡奶)

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
