Chocolate Brownies 巧克力布郎尼

This is a great dessert to share with friends or keep it to yourself. 
i choose to share with my friends because i want to save my waist line from expanding ...lol  Making brownies is easy and straight forward. No extra steps like beating, folding or kneading and no electric hand mixer needed..:D It is easy and simple just melt, mix, pour and bake. 

These brownie taste so good!

Chocolate Brownies 
make 1 7 inches square cake
Recipe adapted from Sally@kitchen corner Originally from 美味糕点新主张a book by a chinese blogger; Jane or visit blog here
(recipe is translated from chinese) 
 
Ingredient A:
100g unsalted butter
120g bittersweet cooking chocolate
(i added 120g butter and 110g cooking chocolate, due to my poor eye sight,  i wrongly read the recipe but it turn out well..phew!!)

B
110g whole egg (i use 2 'A' eggs)
 40g  egg yolk (i use 1 'A' egg yolk)
100g castor sugar (i use 80g)

C
1 Tbsp Cointreau (i use Kahlua)

D
45g plain flour
10g unsweetened cocoa powder
120g lightly toasted walnuts (i follow Sally's method; pre-baked the walnuts for a 150C oven for 8 minutes, coarsely chopped)

To Do:
1. Cut butter and bittersweet into smallish cubes and tip them into a heatproof bowl. Let the bowl sit in a sauce pan with quarter filled hot water. Put over low heat until butter and chocolate have melted, stirring occasionally to mixed them into paste. Remove from pan and side aside. Alternatively, cover the bowl of break chocolate loosely with cling film and put into the mircowave for 1 minute 30 second on HIGH. Add in chopped butter cubes and stir into paste. (return back to mircowave for 30 seconds more if needed)

2. In a mixing bowl, mix eggs and sugar till sugar dissolve. Add in melted chocolate mixture, mix well. Add in Kahlua,  and sieve in flour and cocoa powder, mixed well. Fold in toasted walnuts bits.

3. Pour into a 7 inches by 7 inches baking pan. Spread to level with a plastic spatula. (lined pan with parchment paper, bottom and side. Leaving 2-3cm more hanging at both side.)  Bake in a preheated oven at 170C for 28 minutes. (original recipe is using upper heat 180C and lower heat 150C)

材料:
A
无盐奶油      100
苦甜巧克力  120
 (我把奶油看成120克而巧克力看成110克,就这样做了。还好布郎尼做出来的效果还很好!开心!)

B
全蛋              110克 (我用了2‘A‘蛋)
蛋黄                40克 (我用1 粒‘A‘蛋)
细砂糖          100克 (我用85克)

C
君度酒          1 大匙 (我用咖啡酒-KAHLUA)

D
底筋面粉       45克
无糖可可粉   10克 (一起过筛)
  
E
脆核桃        120克   (以150C 烤8分钟,切脆)

做法:

1。把A料隔水年融化成巧克力糊,备用。 (我用微波炉融化-1分10秒)
2。将全蛋,蛋黄和砂糖放入晚内,以手打蛋器打至糖融化。再加入巧克力糊内,拌均。
3。加入酒,拌均。加入D料,拌均匀的巧克力面糊。
4。再加入脆核桃,拌均。
5。面糊拌好后直接倒入烤模中,以抹刀把面糊抹平。
6。送入,预热170C的烤箱,烤28分钟。(我家烤箱的温度; 原食谱是上火180下火150C烤15-20分钟)

  7. Hi Mui, I kept many. many recipes of brownies but never, never get down to make them, why? I don't know. Somehow walnuts and chocolate is good combination for yummy brownies. Must make some soon........

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy. Add in B, one egg at a time and blend well. 2)
